Chemical safety of food

The triad of food contamination (physical, chemical and microbiological) finds peculiar relevance in chemical risk. Not only for mycotoxins and aflatoxins, or heavy metals. But also for pesticide (or pesticide) residues and environmental chemical contaminants. And microplastics. (1)





Emerging risks





, in the international scenario, are the subject of increasing public attention, as the ‘glyphosate case



demonstrates.

The scientific community, in turn, directs toxicological studies on various fronts. From endocrine disruptors
