Ed ecco due nuovi casi di\u00a0frode in commercio\u00a0&#8211; sulle etichette di formaggi fusi \u2018con Cheddar\u2019 &#8211; ad opera di due dei tre \u2018soliti noti\u2019,\u00a0Mondeleze\u00a0Inalpi. In una logica di\u00a0<em>ZeroWaste<\/em>\u00a0&#8211; contrapposta allo\u00a0spreco alimentare\u00a0&#8211; gli sfridi e i residui di lavorazione dei formaggi vengono riutilizzati su scala industriale, per produrre nuovi cibi.<\/p>\n<p><strong>Dal punto di vista del consumatore<\/strong>, i formaggi fusi costituiscono fonti di proteine del latte e di calcio a costi inferiori rispetto ad altri latticini. Non figurano nelle ricette degli chef pentastellati, e pur vantano un apprezzamento diffuso, grazie anche alla versatilit\u00e0 d\u2019impiego.<\/p>\n<p><strong>Il pur relativo successo\u00a0commerciale<\/strong>, negli ultimi anni, ha consentito di migliorare\u00a0la qualit\u00e0 delle produzioni sotto entrambi i profili di:<\/p>\n<p>&#8211; eliminazione degli additivi polifosfati, sospettati di influire negativamente sulla salute dei consumatori, (2)<\/p>\n<p>&#8211; utilizzo di residui di latticini ben identificati, in quota \u2018formaggi\u2019. Per caratterizzare il sapore (es. Parmigiano Reggiano,\u00a0Emmental,\u00a0Cheddar, Leerdammer) o attribuire propriet\u00e0 peculiari (es. \u2018effetto filante\u2019, con l\u2019ausilio di formaggi a pasta filata come la\u00a0mozzarella).<\/p>\n<h2><span class=\"ez-toc-section\" id=\"La_frode_in_commercio\"><\/span>La frode in commercio<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><a href=\"http:\/\/www.foodagriculturerequirements.com\/category\/notizie\/etichette-e-pubblicit\u00e0-siti-web-e-social-network-marketing-vs-controllo-qualit\u00e0-in-cerca-di-equilibrio\"><strong>Le direzioni marketing<\/strong> di alcuni colossi industriali si sono lasciate prendere la mano<\/a>. Al punto di evidenziare la presenza degli ingredienti caratterizzanti &#8211; come Emmental, Cheddar e mozzarella &#8211; esponendone la quantit\u00e0 rispetto a un singolo ingrediente (\u2018formaggi\u2019). Anzich\u00e9, come doveroso, rispetto alla quantit\u00e0 complessiva degli ingredienti del prodotto. (3)<\/p>\n<p><strong>La quantit\u00e0 dell\u2019ingrediente viene cos\u00ec falsata<\/strong>. In modo tanto palese agli esperti di settore, quanto ingannevole per il consumatore medio. Il quale ultimo viene fraudolentemente indotto a credere, ad esempio, che la qualit\u00e0 delle <a href=\"http:\/\/www.foodagriculturerequirements.com\/category\/notizie\/domande-e-risposte\/eataly-fettine-di-latte-con-emmental-risponde-l-avvocato-dario-dongo\">\u2018Fettine di Latte\u00a0&#8211; Emmental\u2019 di Inalpi <\/a>sia superiore alle fettine\u00a0Tigre.<\/p>\n<p><strong>Nell\u2019esempio citato<\/strong>, il 20% di Emmentaler autentico sul 51% di formaggi svizzeri dichiarati sulle fettine Tigre rappresenta il 10% del prodotto finito. Mentre il 75% di \u2018Emmental\u2019 riferito su un\u2019indefinita quantit\u00e0 dell\u2019ingrediente \u2018formaggi\u2019, nelle rispettive \u2018Fettine di Latte\u2019 Inalpi, potrebbe esprimere il 20-30% del prodotto finito. Laddove il Cheddar rappresenta l\u201982% dei formaggi. La cui quantit\u00e0 viene deliberatamente occultata, all\u2019interno di una copiosa lista ingredienti tra cui figura anche un aroma (neppure naturale) di formaggi (!),<\/p>\n<p><strong>&#8211; \u2018Slurpy Burger\u2019 Inalpi<\/strong>. Anche in questo caso viene esposta la quantit\u00e0 di Cheddar (75%) rispetto all\u2019ingrediente \u2018formaggio\u2019, del quale artatamente si omette la quantit\u00e0 sul prodotto.<\/p>\n<p><strong>\u2018<em>And the fraud must go on<\/em>\u2019<\/strong>.
