Tale informazione \u00e8 dovuta soltanto per la pasta italiana realizzata con semola di grano duro. Nulla sar\u00e0 quindi riferito per altri tipi di pasta.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"La_pasta_priva_di_origine_del_grano\"><\/span>La pasta priva di origine del grano<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<blockquote><p><span style=\"color: #008000;\">Il\u00a0decreto\u00a026 luglio 2017\u00a0su \u2018indicazione dell&#8217;origine, in etichetta, del grano duro per paste di semola di grano duro\u2019 si applica \u2018alle\u00a0paste alimentari di grano duro di cui al decreto del Presidente della Repubblica 9 febbraio 2001, n. 187, ad eccezione delle paste di cui agli articoli 9 e 12 del suddetto decreto del Presidente della Repubblica 9 febbraio 2001, n. 187\u2019 (decreto\u00a026 luglio 2017,\u00a0articolo 1, ambito di applicazione, comma 1).<\/span><\/p><\/blockquote>\n<p><strong>Le paste escluse dall\u2019obbligo<\/strong>\u00a0di indicare in etichetta l\u2019origine di grano e semola sono perci\u00f2:<\/p>\n<p><strong>&#8211;\u00a0paste alimentari fresche<\/strong>\u00a0e stabilizzate (DPR 187\/2001,\u00a0articolo 9),<\/p>\n<p><strong>&#8211;\u00a0pasta alimentare \u2018destinata\u00a0all&#8217;esportazione\u2019<\/strong>\u00a0(DPR 187\/2001,\u00a0articolo 12),<\/p>\n<p><strong>&#8211;\u00a0paste realizzate a partire da cereali diversi dal grano duro<\/strong>\u00a0(Triticum durum). Come il farro (<em>Triticum monococcum,\u00a0Triticum dicoccum,\u00a0Triticum spelta<\/em>) il grano khorasan\u00a0(<em>Triticum turgidum ssp. Turanicum<\/em>, noto come \u2018kamut\u2019), il grano saraceno (impiegato nei <a href=\"https:\/\/www.greatitalianfoodtrade.it\/pasta-fresca\/pizzoccheri\">pizzoccheri IGP della Valtellina<\/a>, nella foto in alto), riso e mais (utilizzati nelle paste senza glutine). Ovvero, paste realizzare a partire da legumi (come l\u2019innovativa pasta di lenticchie del Gruppo\u00a0Pedon).<\/p>\n<blockquote><p><span style=\"color: #008000;\">\u2018Sono denominati \u2018pasta di semola di grano duro\u2019 e \u2018pasta di semolato di grano duro\u2019 i prodotti ottenuti dalla trafilazione, laminazione e conseguente essiccamento di impasti preparati rispettivamente ed esclusivamente:<\/span><\/p>\n<p><span style=\"color: #008000;\">a) con semola di grano duro ed acqua;\u00a0<\/span><\/p>\n<p><span style=\"color: #008000;\">b) con semolato di grano duro ed acqua\u2019 (DPR 187\/2001, articolo 6.1)<\/span><\/p><\/blockquote>\n<p><strong>La\u00a0pasta biologica<\/strong>\u00a0di grano duro, viceversa, non pu\u00f2 intendersi esclusa dal campo di applicazione del c.d. \u2018decreto origine pasta\u2019. N\u00e9 si pu\u00f2 ipotizzare una sintesi delle indicazioni d\u2019origine rispettivamente prescritte\u00a0dal\u00a0reg. CE 834\/07\u00a0(2) e dal\u00a0decreto 26.7.17, poich\u00e9 le due normative prevedono differenti criteri di applicazione.<\/p>\n<p><em>Dario Dongo<\/em><\/p>\n<p><strong>Note<\/strong><\/p>\n<p>(1) DPR 187\/2001,\u00a0<em>Regolamento per la revisione della normativa sulla produzione e commercializzazione di sfarinati e paste alimentari<\/em><\/p>\n<p>(2) V. reg.
