Ma l\u2019informazione \u00e8 un\u2019altra cosa. Sulla\u00a0carne biologica, ecco l\u2019ABC delle regole e dei valori, a raffronto con le\u00a0<i>fake news<\/i>\u00a0riportate da un pur autorevole quotidiano,\u00a0La Stampa.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Carne\u00a0bio, ABC delle regole vs.\u00a0<i>fake news\u00a0<\/i>su La Stampa<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La Stampa<\/b>, nell\u2019edizione del\u00a027.4.2018, presenta a modo\u00a0suo\u00a0il concetto di \u2018carne biologica\u2019.\u00a0(1)\u00a0Ma la realt\u00e0 \u00e8 ben diversa, ed \u00e8 quindi opportuno chiarire le regole e i valori sulla zootecnia bio.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>A) ALLEVAMENTO BIO.\u00a0<\/b>\u2018<i>La definizione di biologico\u2019 &#8211;\u00a0<\/i>secondo Ettore Capri, sul quotidiano torinese\u00a0<i>&#8211; \u2018si riferisce solo al tipo di alimentazione e di terapie veterinarie, non alla modalit\u00e0 di\u00a0<\/i><i>allevamento<\/i><i>\u2019.\u00a0<\/i>Falso.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Le regole UE sulla\u00a0<\/b><b>zootecnia<\/b><b>\u00a0bio<\/b>\u00a0comprendono precisi requisiti sulle modalit\u00e0 di allevamento degli animali.\u00a0(2) Sono definite, anzitutto,\u00a0la\u00a0densit\u00e0\u00a0massima\u00a0degli animali e le condizioni di stabulazione. Cos\u00ec\u00a0\u2018<i>gli animali hanno in permanenza accesso a spazi all\u2019aria aperta, di preferenza pascoli\u2019,<\/i>\u00a0\u2018<i>il numero di animali \u00e8 limitato al fine di ridurre al minimo il\u00a0sovrappascolo, il calpestio del suolo, l\u2019erosione o l\u2019inquinamento provocato dagli animali o dallo spandimento delle loro deiezioni\u2019<\/i>.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Ogni vacca da latte<\/b>, ad esempio, deve contare su 6 mq di spazio al coperto per il ricovero e almeno 4,5 mq di parchetto esterno per sgambare, oltre al pascolo. A ogni tacchino devono venire garantiti almeno 10 mq di spazio libero, a ogni oca almeno 15 mq e cos\u00ec via. Gli spazi all&#8217;aperto per gli avicoli devono essere\u00a0coperti di vegetazione\u00a0per la maggior superficie e garantire il facile accesso a un numero idoneo di abbeveratoi e mangiatoie.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">Per ogni ettaro a disposizione dell&#8217;azienda zootecnica bio non possono venire allevati pi\u00f9 di due bovini, ovvero 13,3 capre, oppure 230 galline ovaiole<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, o 580 polli da carne.\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il benessere animale\u00a0<\/b>\u00e8\u00a0altres\u00ec\u00a0garantito\u00a0dalle\u00a0prescrizioni che seguono:<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211;\u00a0i mammiferi\u00a0devono venire nutriti\u00a0con latte materno per un periodo minimo\u00a0predeterminato,<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211; \u2018<i>i volatili non sono tenuti in gabbie\u2019,<\/i><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211; i ricoveri degli avicoli\u00a0devono \u2018<i>essere costruiti in modo tale da consentire loro un facile accesso allo spazio all\u2019aperto\u2019,<\/i><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211; ogni\u00a0ricovero ha una capienza massima di 3000 galline ovaiole (o 4.800 polli da carne) e il suo pavimento deve essere solido (senza\u00a0grigliato o \u00a0graticciato),\u00a0ricoperto di lettiera (composta di paglia, trucioli di legno, sabbia o erba)\u00a0per almeno 1\/3 dell\u2019area,<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211; \u00a0gli animali\u00a0devono poter accedere a spazi aperti per almeno un terzo della loro esistenza,<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211; \u00e8\u00a0vietata l\u2019alimentazione forzata (cos\u00ec niente\u00a0<i>fois gras<\/i>\u00a0biologico).\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211; l&#8217;et\u00e0 minima per l\u2019abbattimento\u00a0degli avicoli \u00e8 doppia rispetto a quella che vige nella pratica degli allevamenti convenzionali. 81 giorni per i polli, 140 giorni per tacchini e oche, 150 giorni per i capponi,\u00a0<i>etc<\/i>.\u00a0(3)<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Nella realt\u00e0 dei fatti<\/b>, la zootecnia biologica ha inizio con la scelta di razze appropriate, spesso meno \u2018produttive\u2019, bens\u00ec pi\u00f9 \u2018rustiche\u2019 e perci\u00f2 resistenti alle malattie e allo stress da allevamento.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>B)\u00a0<\/b><b>MANGIME BIO<\/b><b>. \u2018<\/b><i>Significa\u2019 &#8211;\u00a0<\/i>secondo La Stampa\u00a0<i>&#8211; \u2018che \u00e8 vietato l\u2019uso di OGM e di pesticidi di sintesi nella sua produzione, anche se comunque \u00e8 ammesso uno 0,9% di tracce di OGM in un prodotto\u00a0bio. La dicitura \u201cno OGM\u201d lascia intendere per\u00f2 che sia un qualcosa di pericoloso da evitare, ma non \u00e8 cos\u00ec\u2019.<\/i><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il quotidiano presenta l\u2019eccezione<\/b>\u00a0&#8211; contaminazione \u2018<i>accidentale o tecnicamente inevitabile\u2019\u00a0<\/i>di mangimi da agricoltura convenzionale con tracce di OGM, entro il limite dello 0,9% riferito a ogni singola materia prima &#8211; come fosse la regola.\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La Stampa omette per\u00f2 di precisare<\/b>\u00a0che la tolleranza di cui sopra \u00e8 condizionata alla capacit\u00e0 dell\u2019operatore di dimostrare\u00a0di avere adottato tutte le misure appropriate per evitare la presenza anche solo di tracce di OGM.\u00a0Questa tolleranza, oltretutto, non discende dalla normativa in materia di produzione biologica, ma da quella in tema di OGM. (4)<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><br \/>\n<b>Le regole UE in materia di OGM\u00a0<\/b>prevedono infatti identiche soglie di tolleranza &#8211; su mangimi convenzionali e bio &#8211; per l&#8217;eventuale presenza accidentale o tecnicamente inevitabile di organismi geneticamente modificati gi\u00e0 autorizzati in UE (0,9%), ovvero\u00a0non ancora autorizzati, purch\u00e9 gi\u00e0 valutati favorevolmente dall\u2019Efsa (0,5%).\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><br \/>\n<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La Stampa omette altres\u00ec\u00a0<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">di comunicare che le aziende biologiche ricorrono spesso a fonti proteiche diverse dalla soia (quella che \u00e8 a rischio contaminazione OGM), come il pisello proteico. il favino e il lupino (vedasi, per esempio\u00a0<\/span><\/span><\/span><cite><a href=\"http:\/\/www.equizoobio.it\/downloads\/martini_04.pdf\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #1155cc;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">www.equizoobio.it\/downloads\/martini_04.pdf<\/span><\/span><\/span><\/a><\/cite><cite><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0 e\u00a0<\/span><\/span><\/span><\/cite><cite><a href=\"https:\/\/www.tesionline.it\/default\/tesi.asp?idt=23357#_=_\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #1155cc;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">https:\/\/www.tesionline.it\/default\/tesi.asp?idt=23357#_=_<\/span><\/span><\/span><\/a><\/cite><cite><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">).<\/span><\/span><\/span><\/cite><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Quanto agli\u00a0<\/b><b>OGM<\/b>\u00a0l\u2019Autore\u00a0Ettore Capri\u00a0afferma il dogma tecnocratico, nessun pericolo. Non pochi studi scientifici evidenziano invece seri rischi (per la salute umana e animale, l\u2019ambiente e la biodiversit\u00e0) associati sia agli OGM, sia agli agrotossici &#8211;\u00a0glifosato\u00a0<i>in primis<\/i>\u00a0&#8211; a cui solo i\u00a0<i>Franken-seed<\/i>\u00a0sono specificamente progettati per resistere. (5)\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>C) FARMACI VETERINARI<\/b>. Si legge, su La Stampa, che \u2018<i>Nella produzione di carne biologica \u00e8 vietata anche la somministrazione agli animali di medicinali allopatici ottenuti per sintesi chimica o di antibiotici per trattamenti preventivi, ma il divieto di antibiotici in via preventiva \u00e8 valido anche per la carne convenzionale\u2019.\u00a0<\/i>Falso.\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>I trattamenti preventivi<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0con farmaci veterinari non sono affatto vietati nella zootecnia convenzionale.\u00a0Si veda al proposito il manuale del<a href=\"http:\/\/www.salute.gov.it\/imgs\/C_17_pubblicazioni_1683_allegato.pdf\" target=\"_blank\" rel=\"noopener\">\u00a0<\/a><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">Ministero della Salute<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0\u2018<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i><a href=\"http:\/\/www.salute.gov.it\/imgs\/C_17_pubblicazioni_1683_allegato.pdf\" target=\"_blank\" rel=\"noopener\">Biosicurezza e uso corretto e razionale degli antibiotici in zootecnia<\/a>\u2019<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">.\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">Laddove \u00e8 previsto che gli antibiotici vengano somministrati agli animali sia in ipotesi di malattia infettiva in corso, sia anche nel caso di \u2018<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>rischio concreto di svilupparla\u2019<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">.\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il Ministero della Salute<\/b>, nel manuale citato, consiglia agli allevatori di \u2018<i>evitare l\u2019uso di antibiotici quando non \u00e8 necessario (es. malattie non infettive, infezioni virali, infezioni autolimitanti)\u2019.<\/i>\u00a0Ma se gli antibiotici fossero davvero utilizzati solo quando necessario, perch\u00e9 il Ministero raccomanderebbe quanto sopra?<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>\u00c8 invece vero che\u00a0<\/b>gli antibiotici &#8211;\u00a0a eccezione di coccidiostatici e\u00a0istomonostatici &#8211; non possono venire utilizzati\u00a0nei mangimi\u00a0come \u2018additivi\u00a0promotori della crescita\u2019, a partire dall\u20191.1.06, in base al\u00a0reg. CE 1831\/03.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>L&#8217;uso preventivo degli antibiotici<\/b>\u00a0non \u00e8 dunque affatto vietato nella zootecnia non-bio. \u00c8 invece\u00a0vietata la sola aggiunta ai mangimi di antibiotici di cui si intenda sfruttare non l&#8217;effetto di profilassi, ma l&#8217;effetto secondario \u2018dopante\u2019 (di\u00a0accelerare il ritmo di crescita\u00a0degli animali)<i>.<\/i><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Carni biologiche e\u00a0salute\u00a0dei consumatori\u00a0<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\">\u2018<span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i><b>Gli<\/b><\/i>\u00a0<i><b>alimenti biologici sono stati trovati sicuri<\/b><\/i>\u00a0<i>quanto i prodotti convenzionali\u2019,\u00a0<\/i>prosegue Ettore Capri. Guai altrimenti, aggiungiamo noi. Atteso che la sicurezza alimentare \u00e8 un pre-requisito per l\u2019immissione in commercio di qualsivoglia alimento, convenzionale e biologico, secondo quanto prescritto dal\u00a0<i>General Food Law<\/i>\u00a0(reg. CE 178\/02).<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La\u00a0<\/b><b>resistenza antibiotica<\/b><b>\u00a0<\/b>merita tuttavia almeno un cenno. Tenuto conto che lo sviluppo delle resistenze agli antibiotici\u00a0\u00a0provoca\u00a0ogni anno 25 mila decessi\u00a0in Europa, con\u00a0una spesa sanitaria stimata in 1,5 miliardi di euro. Ed \u00e8\u2018una delle maggiori minacce per la salute globale\u2019, ad avviso dell\u2019OMS. Non appare perci\u00f2 corretto trascurare il dato\u00a0secondo cui\u00a0il 71% degli antibiotici complessivamente venduti in Italia \u00e8 destinato agli animali.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>\u00c8 eloquente al riguardo<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0la pubblicazione dell&#8217;OMS, \u2018<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i><a href=\"http:\/\/apps.who.int\/iris\/bitstream\/10665\/259744\/1\/9789241513449-eng.pdf\" target=\"_blank\" rel=\"noopener\">Global Antimicrobial Resistance Surveillance System (GLASS) Report<\/a>\u2019<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">. Secondo cui \u2018<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>la resistenza antimicrobica \u00e8 un problema critico di salute pubblica a livello mondiale\u2019<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">. In relazione a 8 patogeni particolarmente diffusi (tra cui\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>Escherichia coli, Salmonella, Staphylococcus aureus<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0e\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>Streptococcus pneumoniae<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">),\u00a0\u2018<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>i tassi di\u00a0<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>antibiotico-resistenza<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>\u00a0sono in aumento, al punto che\u00a0infezioni causate da questi agenti patogeni\u00a0potrebbero dover essere trattate con farmaci di ultima istanza, che potrebbero non solo essere meno efficaci e sicuri, ma potrebbero derivare da processi a maggior uso di risorse e potrebbero essere anche non ampiamente disponibili, in particolare in ambiti a risorse limitate. Abbiamo anche osservato che i latticini biologici presentano un rapporto tra omega-3 e omega-6 (0,42 vs. 0,23) e un indice \u03949-desaturasi (0,28 vs. 0,27) significativamente superiore (P &lt;0.001) rispetto alle versioni convenzionali. Il regolamento vigente in materia di agricoltura biologica, infatti, spinge le aziende agricole biologiche\u00a0 alla produzione di prodotti lattiero-caseari biologici con qualit\u00e0 nutrizionali diverse da quelli convenzionali.
