Dopo anni di intensi dibattiti a Bruxelles, il\u00a0Ministero della Salute\u00a0italiano apre finalmente la strada a\u00a0yogurt\u00a0e prodotti simili.<\/span><\/span><\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>I\u00a0fermenti lattici\u00a0in Italia<\/b>\u00a0sono impiegati nel settore degli\u00a0integratori alimentari\u00a0da almeno 35 anni. Previa autorizzazione del Ministero della Salute, secondo le norme allora vigenti.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">Le prime autorizzazioni furono quelle relative a prodotti che contenevano Saccaromyces cerevisiae, Streptococcus thermophilus e Lactobacillus bulgaricus.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Sul fronte della ricerca, l\u2019Italia\u00a0<\/b>ha raggiunto il secondo posto a livello planetario (dopo gli USA, dotati di ben altre risorse economiche) per numero di pubblicazioni scientifiche in materia di probiotici e prebiotici. Preconizzando il ruolo essenziale del microbiota nella salute di esseri umani e animali, con decenni di anticipo rispetto al consenso raggiunto dalla scienza medica negli ultimi anni.<\/span><\/span><\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il regolamento europeo su\u00a0<\/b><i><b>Nutrition &amp; Health Claims<\/b><\/i><i><b>\u00a0<\/b><\/i>(1)\u00a0ha per\u00f2 introdotto un grave ostacolo alla ricerca su probiotici e prebiotici. Prescrivendo che le relative\u00a0indicazioni sulla salute vengano asseverate da studi clinici su individui sani. Misurazioni prive di significato, se non impossibili, allorch\u00e9 si tratti di stimare le variazioni dello \u2018stato di salute\u2019 su\u00a0parametri nella norma, cio\u00e8 non patologici.<\/span><\/span><\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il Ministero della Salute<\/b>\u00a0italiano, dopo anni di mobilitazione contro il non-senso delle determinazioni di Bruxelles, ha portato avanti l\u2019interpretazione pi\u00f9 logica delle regole europee. Affermando &#8211; in apposite linee-guida (2) &#8211; la possibilit\u00e0 di\u00a0utilizzare i termini \u2018<i>probiotico<\/i>\u2019\u00a0e \u2018<i>prebiotico<\/i>\u2019, sulle\u00a0etichette\u00a0di yogurt e prodotti simili che rispondano a determinate caratteristiche.<\/span><\/span><\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #222222;\">\u2018<span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i><b>Favorisce l\u2019equilibrio della\u00a0<\/b><\/i><i><b>flora intestinale<\/b><b>\u2019<\/b><\/i><i><b>\u00a0<\/b><\/i>\u00e8 l\u2019indicazione ammessa\u00a0sullo yogurt\u00a0comune, derivato dalla\u00a0fermentazione\u00a0con latte con\u00a0ceppi di\u00a0<i>Streptococcus\u00a0thermpophilus<\/i>\u00a0e\u00a0<i>Lactobacillus\u00a0bulgaricus<\/i>.<\/span><\/span><\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Le evidenze scientifiche<\/b>\u00a0disponibili mostrano che la quantit\u00e0 minima sufficiente per ottenere una temporanea colonizzazione dell\u2019intestino da parte di un ceppo microbico \u00e8 di almeno 10^9 cellule vive per giorno. La razione giornaliera raccomandata &#8211; sotto forma di porzioni di prodotto &#8211; deve quindi contenere una quantit\u00e0 pari a 10^9 cellule vive per almeno uno dei ceppi presenti.<\/span><\/span><\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>L\u2019informazione sulla presenza<\/b>\u00a0di un probiotico\/prebiotico\u00a0per il riequilibrio della flora intestinale &#8211; alle condizioni previste nelle linee guida in esame &#8211; non va qualificata come un\u00a0<i>health\u00a0claim<\/i>. Si tratta piuttosto di una dicitura relativa alla presenza di una sostanza, al pari di un ingrediente, nel singolo alimento. Dicitura che si accompagna a un attributo identificativo dei fermenti lattici in questione, con cenno alle loro caratteristiche secondo la scienza generalmente riconosciuta.<\/span><\/span><\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>I microrganismi<\/b>\u00a0che possono venire impiegati negli alimenti e negli integratori alimentari, a loro volta, devono soddisfare i seguenti requisiti:<\/span><\/span><\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">a) venire usati tradizionalmente per integrare la microflora (microbiota) intestinale dell\u2019uomo,<\/span><\/span><\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">b) essere considerati sicuri per l\u2019impiego nell\u2019uomo.\u00a0Un utile riferimento a tal fine \u00e8 rappresentato dai criteri definiti dall\u2019EFSA sullo\u00a0<i>status<\/i>\u00a0di \u2018QPS\u2019 (\u2018<i>Presunzione Qualificata di Sicurezza<\/i>\u2019). In ogni caso i microrganismi usati per la produzione di alimenti non devono essere portatori di antibiotico-resistenza acquisita e\/o trasmissibile,<\/span><\/span><\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">c) essere attivi a livello intestinale in quantit\u00e0 tale da moltiplicarsi in tale sede (vedi sezione 1.3,\u00a0<i>Quantit\u00e0 di microrganismi<\/i>).<\/span><\/span><\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: medium;\"><em><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\">Dario Dongo<\/span><\/span><\/em><\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: medium;\"><strong><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\">Note<\/span><\/span><\/strong><\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">(1) Cfr.\u00a0reg.
