Per migliorare la funzionalit\u00e0 intestinale, aumentare il senso di saziet\u00e0, contribuire al controllo del peso e dei livelli insulinemici.\u00a0<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Sostituire i cereali\u00a0raffinati\u00a0con quelli\u00a0integrali<\/b>\u00a0accelera il metabolismo, secondo\u00a0una ricerca pubblicata su\u00a0<i>American Journal of Clinical Nutrition<\/i>. Nello studio, il gruppo di individui\u00a0che ha inserito cereali integrali nella\u00a0dieta ha \u2018bruciato\u2019 ogni giorno 100 kcal in pi\u00f9 rispetto a quello di coloro che hanno assunto solo\u00a0cereali raffinati. Anzitutto grazie a\u00a0un aumento del metabolismo basale a riposo.\u00a0<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Le\u00a0<\/b><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>fibre vegetali<\/b><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, del resto, hanno di recente rivelato il potere di nutrire\u00a0il\u00a0<\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">microbiota<\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">,\u00a0la popolazione batterica intestinale,\u00a0e cos\u00ec stimolare varie funzioni organiche.\u00a0<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>L\u2019universit\u00e0 di Harvard<\/b>\u00a0ha aggiunto ulteriori spunti, ricavati da amplissimi studi prospettici sui lavoratori americani nel settore della sanit\u00e0. (2) Tanto i dolciumi e i cereali raffinati (nonch\u00e9 bevande zuccherate e patate) favoriscono l\u2019obesit\u00e0, quanto i cereali integrali &#8211; assieme a legumi, verdure, frutta e semi oleaginosi &#8211; aiutano a prevenirla.<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La prevenzione di\u00a0<\/b><b>diabete<\/b><b>\u00a0di tipo 2<\/b>,\u00a0malattie coronariche,\u00a0patologie infiammatorie,\u00a0tumore dell\u2019intestino \u00e8 a sua volta associata, nella ricerca di cui sopra, proprio\u00a0al regolare consumo di cereali integrali. Integrale \u00e8 dunque meglio, senza ombra di dubbio.<\/span><\/span><\/p>\n<h2><span class=\"ez-toc-section\" id=\"Integrale_vero_o_falso_Ecco_come_distinguere_e_perche\"><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Integrale, vero o falso? Ecco come distinguere, e perch\u00e9 \u00a0<\/b><\/span><\/span><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il\u00a0<\/b><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>pane integrale<\/b><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>\u00a0vero<\/b><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0&#8211; e i pani da farine poco raffinate &#8211; possono venire distinti, come si \u00e8 visto, grazie alla\u00a0<\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">lista ingredienti<\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">.<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>I\u00a0<\/b><b>prodotti da forno integrali<\/b>\u00a0si distinguono applicando lo stesso criterio. Vale a dire, in elenco degli ingredienti si devono trovare sole farine e semole integrali. Quando invece si legge la presenza di farine raffinate con aggiunta di crusca o cruschello, ci si trova di fronte a un falso integrale.<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Tra\u00a0<\/b><b>integrale vero\u00a0e\u00a0integrale falso<\/b>, le differenze sono cruciali. Vale la pena ricordare che il chicco dei cereali \u00e8 costituito da tre componenti, endosperma, crusca e germe.\u00a0<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il germe<\/b>\u00a0&#8211; ricco di proteine a elevato valore biologico, acidi grassi polinsaturi, vitamine e sali minerali &#8211; si deteriora rapidamente quando le sue cellule vengono rotte. Cio\u00e8 quando il chicco viene aperto, schiacciato (in fiocchi) o macinato (in farine o semole). Ed \u00e8\u00a0del tutto\u00a0assente\u00a0quando il chicco \u00e8 raffinato, vale a dire privato del rivestimento.<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La farina tipo 00<\/b>, quella raffinata pi\u00f9 finemente, \u00e8 perci\u00f2 del tutto priva di germe e crusca. E cos\u00ec pure la <b>farina tipo 0<\/b>, che non se ne discosta granch\u00e9. Le <b>farine tipo 1 e tipo 2 <\/b>(quest\u2019ultima nota anche come \u2018semi-integrale\u2019) sono progressivamente\u00a0meno raffinate. Contengono perci\u00f2 una crescente quantit\u00e0 di fibre e principi nutritivi.<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La farina integrale vera e propria<\/b> deriva invece dalla macinazione del chicco intero, che mantiene quindi il germe nella sua integralit\u00e0, e le corrispondenti virt\u00f9 nutritive.<\/span><\/span><\/p>\n<h2><span class=\"ez-toc-section\" id=\"Falso_integrale_perche\"><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Falso integrale, perch\u00e9?<\/b><\/span><\/span><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><a name=\"_GoBack\"><\/a><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Dal punto di vista delle tecnologie alimentari<\/b>, lavorare farine poco raffinate e integrali richiede un maggior impegno, tempi pi\u00f9 lunghi <span style=\"color: #0070c0;\">di lievitazione<\/span>, macchinari diversi.<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La soluzione pi\u00f9 facile ed economica<\/b> \u00e8 dunque lavorare farine finissime, le quali\u00a0tra l\u2019altro si conservano pi\u00f9 a lungo, e aggiungere crusca all\u2019impasto.<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>L\u2019inganno in etichetta<\/b>\u00a0era stato tra l\u2019altro autorizzato, quindici anni fa, in una circolare del\u00a0Ministero delle Attivit\u00e0 produttive che\u00a0offriva un\u2019interpretazione \u2018di comodo\u2019 a <i>Big Food<\/i>. (3)<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il Ministero aveva a suo tempo consentito<\/b> di definire come \u2018integrali\u2019 sia gli alimenti effettivamente realizzati con farine integrali, sia quelli prodotti con farine raffinate aggiunte a crusca e cruschello.\u00a0<\/span><\/span><\/p>\n<h2><span class=\"ez-toc-section\" id=\"Falso_integrale_ora_Basta\"><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Falso integrale, ora Basta!<\/b><\/span><\/span><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il regolamento \u2018<\/b><i><b>Food Information to Consumers<\/b><\/i><b>\u2019 <\/b>\u00e8 cristallino nel prescrivere un\u2019informazione rigorosa ai consumatori rispetto ai prodotti alimentari. Avendo riguardo alle notizie obbligatorie, come pure a quelle facoltative. (4)<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif; color: #800000; font-size: medium;\">\u2018<i><b>Le informazioni sugli alimenti fornite su base volontaria <\/b><\/i><i>soddisfano i seguenti requisiti:\u00a0<\/i><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif; color: #800000; font-size: medium;\"><i>a) non inducono in errore il consumatore, come descritto all\u2019articolo 7,<\/i><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif; color: #800000; font-size: medium;\"><i>b) non sono ambigue n\u00e9 confuse per il consumatore, e<\/i><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif; color: #800000; font-size: medium;\"><i>c) sono, se del caso, basate sui dati scientifici pertinenti<\/i>\u2018 (reg. UE 1169\/11, articolo 36.2).<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Le pratiche leali d\u2019informazione<\/b> definite all\u2019articolo 7 del regolamento UE 1169\/11, a loro volta, vietano di indurre in errore il consumatore:<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211; \u2018<i>per quanto riguarda le caratteristiche dell\u2019alimento e, in par\u001fticolare, la natura, l\u2019identit\u00e0, le propriet\u00e0, la composizione (&#8230;), il metodo di fabbricazione o di pro\u001fduzione<\/i>\u2019,<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211; \u2018<i>suggerendo, tramite l\u2019aspetto, la descrizione o le illustrazioni, la presenza di un particolare alimento <\/i>[es. integrale]<i> o di un ingrediente\u00a0<\/i>[es. farina integrale]<i>, mentre di fatto un componente naturalmente presente o un ingrediente normalmente utilizzato in tale alimento\u00a0<\/i>[es. farina integrale]\u00a0<i>\u00e8 stato sostituito con un diverso componente o un diverso ingre\u001fdiente\u00a0<\/i>[es. farina raffinata con aggiunta di crusca].\u2019<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il falso integrale deve ora perci\u00f2 venire punito<\/b> ai sensi del d.lgs. 231\/17, articolo 3.\u00a0<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">Con la sanzione amministrativa pecuniaria da 3 mila a 24 mila euro, \u2018salvo che il fatto costituisca reato\u2019.
