Poich\u00e9 colonizza\u00a0il grosso intestino gi\u00e0 nei primi mesi\u00a0di vita\u00a0del neonato\u00a0e svolge\u00a0nel tempo\u00a0un\u2019azione\u00a0utile a mantenere l\u2019equilibrio del microbiota.\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i><b>E. coli\u00a0<\/b><\/i><b>\u00e8 quindi presente<\/b>\u00a0in via fisiologica e\u00a0continuativa\u00a0nell\u2019intestino umano, cos\u00ec come in quello degli animali. La presenza del batterio nei prodotti alimentari, di conseguenza, rappresenta un\u00a0indice di contaminazione da feci che interessa in particolare le materie prime agricole, anche vegetali.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>L\u2019evoluzione genetica della specie<\/b>\u00a0ha poi condotto alla selezione di\u00a0batteri\u00a0particolarmente aggressivi,\u00a0capaci di causare forme infettive a carico delle vie urinarie, meningite, setticemia oppure malattie gastroenteriche.<\/span><\/span><\/span><\/p>\n<h2><span class=\"ez-toc-section\" id=\"Shiga-tossine_il_grave_pericolo\"><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Shiga-tossine, il grave pericolo<\/b><\/span><\/span><\/span><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Gli STEC<\/b>, vale a dire\u00a0gli stipiti di\u00a0<i>E.<\/i>\u00a0<i>coli<\/i>\u00a0capaci di produrre\u00a0Shiga-tossine,\u00a0si annoverano tra i pi\u00f9 pericolosi\u00a0batteri\u00a0a trasmissione alimentare. I\u00a0batteri sono infatti\u00a0capaci\u00a0di aderire saldamente alle cellule dell\u2019epitelio\u00a0intestinale e le tossine\u00a0da essi prodotte entrano rapidamente\u00a0in circolo.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Le tossine\u00a0<\/b><i><b>Shiga-like<\/b><\/i>\u00a0esplicano\u00a0cos\u00ec la loro azione su cellule bersaglio lontane dal tratto intestinale, come\u00a0le cellule endoteliali che rivestono i\u00a0vasi dei\u00a0glomeruli renali e i piccoli vasi sanguigni del colon. Le infezioni da STEC sono perci\u00f2 caratterizzate da episodi diarroici talvolta complicati da emorragie intestinali (colite emorragica) e, nei casi pi\u00f9 gravi, da insufficienza renale acuta. L\u2019insufficienza reale \u00e8 aggravata da una concomitante anemia emolitica e da carenza di piastrine, che concorrono a delineare il grave quadro della cosiddetta Sindrome Emolitico-Uremica (SEU).<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>SEU e colite emorragica<\/b>\u00a0possono essere letali, o\u00a0portare a\u00a0gravi\u00a0conseguenze quali l\u2019insufficienza renale cronica e la necessit\u00e0 di un trapianto di rene,\u00a0soprattutto se ad essere colpiti siano bambini in tenera et\u00e0 (in genere intorno ai due anni) o persone anziane debilitate. La gravit\u00e0 della malattia induce le autorit\u00e0 preposte alla tutela della salute pubblica alla massima severit\u00e0\u00a0nel caso un prodotto alimentare ne risulti contaminato. Non esistono dunque limiti microbici tollerabili ed \u00e8 sufficiente la sola presenza di STEC a qualificare un alimento come\u00a0pericoloso. (1)<\/span><\/span><\/span><\/p>\n<h2><span class=\"ez-toc-section\" id=\"Fontina_DOP_Carrefour_e_shiga-tossine_il_rischio_incontrollato\"><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Fontina DOP Carrefour e shiga-tossine, il rischio incontrollato<\/b><\/span><\/span><\/span><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Nel<\/b>\u00a0<b>caso della fontina\u00a0DOP Terre d\u2019Italia\u00a0<\/b>(Carrefour), la presenza dei batteri STEC pu\u00f2 venire\u00a0ragionevolmente\u00a0ricondotta all\u2019uso del latte vaccino. Molti animali, i ruminanti soprattutto, albergano\u00a0<i>E. coli<\/i>\u00a0produttori di\u00a0Shiga-tossine a livello intestinale senza presentare alcun sintomo di malattia. Gli animali si comportano, in questi casi, come \u2018portatori asintomatici\u2019. E il loro latte o le loro carni &#8211; in difetto delle opportune analisi &#8211; rischiano di venire immessi liberamente\u00a0nel circuito commerciale.\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>L\u2019alimento oggetto di richiamo<\/b>\u00a0presenta una maggiore pericolosit\u00e0, trattandosi di prodotto\u00a0<i>Ready-to-Eat<\/i>, non soggetto a cottura prima del consumo. I trattamenti termici a temperatura superiore ai 70\u00b0C (quella richiesta per pastorizzare il latte o cuocere le carni), viceversa, sono efficaci per distruggere gli stipiti di\u00a0<i>E. coli<\/i>\u00a0produttori di\u00a0Shiga-tossine.\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La\u00a0<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>sicurezza alimentare<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>\u00a0<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">deve venire garantita da tutti gli operatori della filiera. Anzitutto dall\u2019Osa (Operatore del Settore Alimentare), ma anche dal distributore, vieppi\u00f9 quando i prodotti siano commercializzati a suo marchio. \u00a0Basterebbe\u00a0eseguire controlli microbiologici preventivi per escludere la presenza di tali microrganismi su alimenti\u00a0altamente patogeni.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>In\u00a0<\/b><b>Val d\u2019Aosta<\/b><b>\u00a0(o Val da Ossa), patria della fontina,<\/b>\u00a0per\u00f2, le regole europee a presidio della sicurezza alimentare e dell\u2019ambiente hanno pi\u00f9 volte ceduto il passo, negli ultimi anni, ai biechi interessi del malaffare. Con il sostegno dei politicanti locali, i quali hanno introdotto deroghe in contrasto con il diritto UE. (2) E la colpevole indifferenza della magistratura che &#8211; ignorando le regole che vigono in Europa da dodici anni almeno &#8211; \u00e8 giunta ad assolvere la produzione di fontina in locali abusivi.
