L\u00e0 dove l\u2019altitudine e\/o la ripidezza dei pendii limitano drasticamente le\u00a0<i>chance<\/i>\u00a0di utilizzare le terre, aumentandone i costi di lavorazione.\u00a0(3)<\/span><\/span><\/span><\/p>\n<h2><span class=\"ez-toc-section\" id=\"%E2%80%98Prodotto_di_montagna_le_regole_da_seguire\"><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #222222;\"><i><b>&#8216;Prodotto di montagna<\/b><\/i><\/span><span style=\"color: #222222;\"><b>\u2019, le regole da seguire<\/b><\/span><\/span><\/span><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>L\u2019indicazione facoltativa di qualit\u00e0<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0\u2018<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>prodotto di montagna<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u2019 \u00e8 soggetta alle condizioni precisamente definite nel DM 26.7.17. Al preciso scopo di prevenire inganni come quello del\u00a0\u2018<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>Latte alpino\u2019<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0di pianura<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #222222;\"><b>Le zone di montagna<\/b><\/span><span style=\"color: #222222;\">\u00a0devono perci\u00f2 venire localizzate soltanto nei Comuni classificati come (totalmente o parzialmente) montani e sono indicate a livello regionale.\u00a0(4)<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #222222;\"><b>La definizione<\/b><\/span><span style=\"color: #222222;\">\u00a0<\/span><span style=\"color: #222222;\"><b>di prodotto di montagna<\/b><\/span><span style=\"color: #222222;\">\u00a0deriva invece\u00a0dalla normativa europea.\u00a0Ed \u00e8 proprio\u00a0il\u00a0<\/span><span style=\"color: #222222;\">reg.\u00a0UE\u00a01151\/2012<\/span><span style=\"color: #222222;\">\u00a0\u2013 lo stesso che tutela DOP e IGP \u2013 a prescrivere quanto segue:<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211;\u00a0<b>le materie prime e i mangimi<\/b>\u00a0devono provenire \u2018<i>essenzialmente<\/i>\u2019\u00a0da zone di montagna,<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #222222;\">&#8211;\u00a0<\/span><span style=\"color: #222222;\"><b>la trasformazione<\/b><\/span><span style=\"color: #222222;\">, ivi comprese le attivit\u00e0 di\u00a0stagionatura e maturazione, deve a sua volta avere\u00a0luogo nelle aree predette.\u00a0(5)<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #222222;\"><b>Gli animali\u00a0<\/b><\/span><span style=\"color: #222222;\">devono venire allevati\u00a0<\/span><span style=\"color: #222222;\"><i>in loco<\/i><\/span><span style=\"color: #222222;\">. Per almeno 2\/3 della vita,\u00a0nel caso di prodotti trasformati. Agli\u00a0animali transumanti invece basta trascorrere sui monti\u00a0solo\u00a0un quarto dell\u2019esistenza.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #222222;\"><b>I mangimi\u00a0<\/b><\/span><span style=\"color: #222222;\">di provenienza diversa sono ammessi in allevamento entro una quota media del 50%, che si riduce al 40% per i ruminanti e si estende al 75% per i suini.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #222222;\"><b>Erbe, spezie e zucchero<\/b><\/span><span style=\"color: #222222;\">\u00a0utilizzati nelle produzioni alimentari possono a loro volta provenire da aree diverse, purch\u00e9 non superino il 50% del peso degli ingredienti immessi in ricetta.\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Le\u00a0deroghe<\/b>\u00a0riguardano\u00a0alcune singole operazioni\u00a0(es.\u00a0macellazione, spremitura degli\u00a0oli), purch\u00e9 gli impianti siano localizzati entro i 30 km dal confine amministrativo della zona di montagna.
