Come districarsi nella scelta a scaffale.<\/b><\/span><\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Gli studi scientifici convergono<\/b><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0<\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">nel riconoscere vari\u00a0benefici\u00a0per la salute\u00a0ai\u00a0cereali integrali. Gli esperti di nutrizione e le riviste di settore\u00a0ne raccomandano perci\u00f2 il consumo, e i consumatori si adeguano.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il mercato \u00e8\u00a0evoluto<\/b><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0di conseguenza, negli ultimi anni, ampliando in misura significativa l\u2019offerta di prodotti a base di cereali integrali. Prova ne \u00e8 lo sviluppo di linee di pasta integrale &#8211;\u00a0un tempo relegata alla nicchia del bio e della macrobiotica &#8211;\u00a0anche\u00a0<a href=\"https:\/\/www.foodagriculturerequirements.com\/notizie\/barilla-integrale-quante-fibre-rispetto-al-fabbisogno-risponde-lavvocato-dario-dongo\/\" target=\"_blank\" rel=\"noopener\">da parte dei colossi industriali<\/a><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">.\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif; color: #333333; font-size: medium;\"><b>Troppa ambiguit\u00e0\u00a0<\/b>si riscontra ancora, tuttavia, sulle etichette dei\u00a0prodotti da forno\u00a0designati come \u2018integrale\u2019. I quali spesso non sono effettivamente tali, poich\u00e9 in aggiunta\u00a0alla farina integrale contengono farine diverse, pi\u00f9 o meno \u2018raffinate\u2019.<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif; color: #333333; font-size: medium;\"><b>La dicitura \u2018<\/b><i><b>100% integrale<\/b><\/i><b>\u2019<\/b>\u00a0\u00e8 emersa, negli ultimi anni, proprio\u00a0per distinguere gli alimenti che rispondono al significato autentico della parola. Tale dicitura, si noti bene, non \u00e8 prevista da alcuna norma. Si \u00e8 affermata nella prassi di alcuni operatori, piuttosto, come un antidoto alla confusione generale.<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif; color: #333333; font-size: medium;\"><b>Integrale, la confusione a scaffale\u00a0<\/b><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif; color: #333333; font-size: medium;\"><b>Galbusera<\/b>\u00a0\u00e8 uno dei tanti altri operatori che si trova ad affrontare l\u2019attuale\u00a0confusione a scaffale\u00a0dei prodotti da forno \u2018integrali\u2019.\u00a0I suoi frollini \u2018<i>Gran Saraceno\u2019<\/i>\u00a0(8,81 euro\/kg) sono invero definiti come &#8216;<i>frollino integrale con grano saraceno<\/i>&#8216;. La lista ingredienti mostra\u00a0tuttavia al primo posto\u00a0una farina diversa, sebbene \u2018<i>di tipo 2\u2019<\/i>, cio\u00e8 \u2018<i>poco raffinata<\/i>\u2019, nel lessico in voga.\u00a0<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif; color: #333333; font-size: medium;\"><b>Il prodotto \u00e8 apprezzabile<\/b>\u00a0sotto vari aspetti, dalla qualit\u00e0 delle materie prime al profilo nutrizionale (ed \u00e8 tra l\u2019altro ricco in fibre). E tuttavia, la dicitura \u2018<i>integrale<\/i>\u2019 risulta ambigua anche rispetto ad altre referenze del suo stesso catalogo.<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif; color: #333333; font-size: medium;\"><b>Paradossalmente, l\u2019operatore\u00a0<\/b>\u00e8 vittima della confusione a scaffale a cui esso stesso contribuisce. Al punto da dover precisare\u00a0&#8216;<i>100% farina integrale<\/i>&#8216; (37%) sul fronte etichetta di un\u00a0un altro biscotto\u00a0&#8211; il \u2018<i>VitaG\u00ec<\/i>\u2019 (8,63 euro\/kg)\u00a0&#8211; che a sua volta \u00e8\u00a0definito &#8216;<i>frollino integrale<\/i>&#8216;.<\/span><\/p>\n<p><span style=\"color: #333333;\"><a href=\"http:\/\/www.foodtimes.eu\/wp-content\/uploads\/2018\/10\/garn-saraceno-ambiguo.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-35159\" src=\"http:\/\/www.foodtimes.eu\/wp-content\/uploads\/2018\/10\/garn-saraceno-ambiguo.jpg\" alt=\"\" width=\"640\" height=\"400\" srcset=\"https:\/\/www.foodtimes.eu\/wp-content\/uploads\/2018\/10\/garn-saraceno-ambiguo.jpg 640w, https:\/\/www.foodtimes.eu\/wp-content\/uploads\/2018\/10\/garn-saraceno-ambiguo-300x188.jpg 300w, https:\/\/www.foodtimes.eu\/wp-content\/uploads\/2018\/10\/garn-saraceno-ambiguo-150x94.jpg 150w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/span><\/p>\n<p><span style=\"color: #333333;\"><a href=\"http:\/\/www.foodtimes.eu\/wp-content\/uploads\/2018\/10\/galbusera-corretto.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-35140\" src=\"http:\/\/www.foodtimes.eu\/wp-content\/uploads\/2018\/10\/galbusera-corretto.jpg\" alt=\"\" width=\"640\" height=\"400\" srcset=\"https:\/\/www.foodtimes.eu\/wp-content\/uploads\/2018\/10\/galbusera-corretto.jpg 640w, https:\/\/www.foodtimes.eu\/wp-content\/uploads\/2018\/10\/galbusera-corretto-300x188.jpg 300w, https:\/\/www.foodtimes.eu\/wp-content\/uploads\/2018\/10\/galbusera-corretto-150x94.jpg 150w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/span><\/p>\n<p><span style=\"color: #333333; font-size: medium;\"><span style=\"font-family: Arial, sans-serif;\"><b>Integrale, semaforo verde-giallo-rosso<\/b><\/span><\/span><\/p>\n<p><span style=\"color: #333333; font-size: medium;\"><span style=\"font-family: Arial, sans-serif;\"><b>Il vero prodotto integrale<\/b>\u00a0&#8211; a prescindere dalla precisazione \u2018<i>100%<\/i>\u2019, su base volontaria &#8211; \u00e8 quello esclusivamente realizzato a partire da cereali integrali e loro derivati (es. farine, semole, fiocchi).<\/span><\/span><\/p>\n<p><span style=\"color: #333333; font-size: medium;\"><span style=\"font-family: Arial, sans-serif;\"><b>Se invece la lista ingredienti<\/b>\u00a0riferisce alla presenza di cereali raffinati (es. farina di frumento di tipo 0), magari pure con l\u2019aggiunta di crusca o cruschello, ci si trova di fronte a un &#8216;falso integrale&#8217;.<\/span><\/span><\/p>\n<p><span style=\"color: #333333; font-size: medium;\"><span style=\"font-family: Arial, sans-serif;\"><b>Tra il vero e il falso<\/b>, si osservano varie sfumature di grigio. Anzi di giallo, nel codice cromatico dei semafori. Queste situazioni possono venire considerate semplicemente ambigue o palesemente illegittime, a seconda dei casi.\u00a0<\/span><\/span><\/p>\n<p><span style=\"color: #333333; font-size: medium;\"><span style=\"font-family: Arial, sans-serif;\"><b>Bisogna sempre valutare<\/b>, infatti, la presentazione complessiva del prodotto e della sua idoneit\u00e0 a indurre il consumatore in errore in merito alle sue caratteristiche essenziali. (1)\u00a0<\/span><\/span><\/p>\n<p align=\"JUSTIFY\"><span style=\"font-size: medium; color: #ff0000;\"><strong><span style=\"font-family: Arial, sans-serif;\">\u2018<i>L&#8217;elenco<\/i>\u00a0<i>degli ingredienti, pur essendo esatto ed esaustivo, pu\u00f2 essere inadeguato a correggere in maniera sufficiente l&#8217;impressione errata o equivoca del consumatore relativa alle caratteristiche di un prodotto alimentare risultante dagli altri elementi che compongono l&#8217;etichettatura di tale prodotto\u2019<\/i>\u00a0(Corte di Giustizia UE). (2)<\/span><\/strong><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif; color: #333333; font-size: medium;\">Tre esempi nel semaforo, a seguire.<\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>1) Monviso<\/b><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>, \u2018<\/b><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i><b>Bruschette integrali\u2019<\/b><\/i><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>.<\/b><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0<\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Rosso<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #333333; font-size: medium;\"><span style=\"font-family: Arial, sans-serif;\">Il prodotto contiene solo farina di grano tenero tipo 0. Giallo<\/b><\/span><\/span><\/p>\n<p><span style=\"color: #333333; font-size: medium;\"><span style=\"font-family: Arial, sans-serif;\">La ricetta contiene farina di frumento e una piccola quantit\u00e0 di farina integrale di grano saraceno (6,2%). La dicitura &#8216;<i>con farina integrale<\/i>&#8216; \u00e8 formalmente lecita, ma la sua collocazione sul fronte dell\u2019etichetta &#8211; nel contesto visuale complessivo &#8211; pu\u00f2 indurre in errore i consumatori. Sarebbe meglio precisare sullo stesso fronte &#8216;<i>con il 6,2% di farina integrale<\/i>&#8216;.
