Le 22 associazioni che rappresentano i pazienti allergici in diverse aree del globo chiedono al\u00a0<i>Codex Alimentarius<\/i>\u00a0l\u2019adozione di linee guida uniformi a livello planetario.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>Allergie alimentari, una minaccia globale<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>La \u2018<\/b><i><b>World Allergy Organization<\/b><\/i>\u2019\u00a0stima in 240-550 milioni gli individui affetti da allergie alimentari. La cui prevalenza \u00e8 in aumento a livello globale e ha impatto significativo sulla qualit\u00e0 della vita. Laddove, a tutt\u2019oggi, non esiste una cura.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>\u00c8 una questione di vita o di morte<\/b>, poich\u00e9 nei casi pi\u00f9 gravi basta l\u2019apporto di una quantit\u00e0 minima della sostanza a cui l\u2019individuo \u00e8 allergico per scatenare una reazione immune con esito anche letale. E viene ancora sottovalutata addirittura da\u00a0<i>Big Food<\/i>. (1)<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>PAL,\u00a0<\/b><i><b>Precautionary Allergen Labelling,\u00a0<\/b><\/i><b>le criticit\u00e0\u00a0<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>L\u2019informazione precauzionale<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">\u00a0circa la possibile presenza di allergeni nei prodotti alimentari preconfezionati, preincartati e sfusi rappresenta oggi una grave criticit\u00e0 per la\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">sicurezza alimentare<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\">\u2018<span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><i><b>The Journal of allergy\u00a0<\/b><\/i><\/span><\/span><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><i>and clinical immunology\u2019\u00a0<\/i><\/span><\/span><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">ha infatti pubblicato un recente studio (2) ove si individuano quali prime cause di reazioni allergiche accidentali entrambi i fattori di:<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">&#8211; etichette prive di indicazioni appropriate circa la possibile presenza di ingredienti allergenici,<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">&#8211; difetto di considerazione, da parte dei pazienti allergici, di indicazioni precauzionali. (3)<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>La\u00a0confusione<\/b>\u00a0<b>delle notizie in etichetta<\/b>\u00a0\u00e8 la prima causa di\u00a0criticit\u00e0. L\u2019incertezza regna sovrana:<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>&#8211; nei concetti<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">, ogni qualvolta si faccia riferimento a <a href=\"https:\/\/www.foodagriculturerequirements.com\/notizie\/puo-contenere-tracce-di-allergeni-indizio-di-crimine\/\">indefinite \u2018<em>tracce<\/em>&#8216;<\/a><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">\u00a0o a condizioni produttive inevitabilmente ignote al consumatore (es. \u2018<\/span><\/span><\/span><span style=\"font-size: medium;\"><a href=\"https:\/\/www.foodagriculturerequirements.com\/notizie\/allergeni-in-etichette-alimentari-quanta-confusione-il-commento-dellavvocato-dario-dongo\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><i>prodotto in uno stabilimento dove si lavorano anche \/ sono presenti&#8230;<\/i><\/span><\/span><\/a><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">\u2019<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">).<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>&#8211; nei contenuti<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">. Laddove si maschera l\u2019identit\u00e0 dei singoli ingredienti allergenici dietro affermazioni generiche e vietate<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">, come \u2018<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><i>cereali contenenti glutine<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">\u2019 e \u2018<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><i>frutta secca con guscio<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">\u2019.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>Una seconda criticit\u00e0\u00a0<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">\u00e8 dovuta all\u2019inadeguatezza dell\u2019autocontrollo da parte degli operatori che partecipano alla filiera alimentare. I quali, si ricorda, hanno precise responsabilit\u00e0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">\u00a0in termini di applicazione delle buone prassi igieniche e HACCP.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>L\u2019operatore <a href=\"https:\/\/www.foodagriculturerequirements.com\/notizie\/domande-e-risposte\/nome-e-indirizzo-in-etichetta-risponde-lavvocato-dario-dongo\">responsabile<\/a><\/b><\/span><\/span><\/span><span style=\"font-size: medium;\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00a0dell\u2019informazione al consumatore<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">, a sua volta, deve decidere se inserire un\u2019informazione precauzionale corretta soltanto a esito di una scrupolosa analisi del rischio di contaminazione del prodotto alimentare con una o pi\u00f9 delle singole proteine oggetto di indicazione obbligatoria. (4)<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>L\u2019informazione precauzionale corretta\u00a0<\/b>&#8211; \u2018<i>Contiene<\/i>\u2019 o \u2018<i>Pu\u00f2 contenere&#8230;\u2019<\/i>, seguita dal nome specifico dei singoli allergeni che potrebbero residuare nell\u2019alimento, a causa di contaminazione crociata &#8211; deve quindi venire esposta, a margine della lista ingredienti, con caratteri altrettanto visibili (per altezza e grafica).<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>PAL<\/b><i><b>,\u00a0<\/b><\/i><b>le richieste delle associazioni al\u00a0<\/b><i><b>Codex Alimentarius<\/b><\/i><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>Food Allergy Italia e altre 18<\/b>\u00a0organizzazioni che rappresentano i consumatori allergici in varie parti del mondo &#8211; UE, USA, Brasile, Hong Kong, Giappone &#8211; hanno affidato al\u00a0<i>Codex Alimentarius<\/i>, con lettera 7.11.18, le loro istanze condivise e indifferibili.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>IFAAA (<\/b>\u2018<i><b>International Food Allergy<\/b><\/i>\u00a0<i>&amp; Anaphylaxis Alliance\u2019<\/i>) ha scritto al Gruppo di Lavoro impegnato a redigere il Codice di buone prassi per gli operatori alimentari (\u2018<i>Draft Code of Practice for Food Business Operators<\/i>\u2019). Per esporre i problemi e chiedere l\u2019adozione di apposite Linee guida.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\"><b>La gestione degli allergeni alimentari\u00a0<\/b>e della loro etichettatura, con particolare riguardo al PAL (\u2018<i>Precautionary Allergen Labelling<\/i>\u2019), deve venire basata sull\u2019analisi del rischio. Per consentire ai consumatori allergici di compiere scelte alimentari sicure e informate. \u00c8 quindi necessario:<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\">\u2022\u00a0<span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">rivedere i criteri di valutazione del rischio, i quali devono includere un approccio quantitativo (con il potenziale sviluppo di dosi di riferimento),<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\">\u2022\u00a0<span style=\"font-family: Arial, Helvetica, sans-serif;\"><span style=\"font-size: medium;\">applicare tali criteri nelle linee guida rivolte agli operatori di settore.
