Per collaborare alla ricerca universitaria della nostra amica e Collaboratrice Carlotta Totaro Fila, sull\u2019attitudine dei consumatori italiani verso le\u00a0proteine animali.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il questionario<\/b><\/span><\/span><\/span><span style=\"color: #000000;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0si inserisce in<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0un\u2019indagine statistica volta a considerare la frequenza di consumo di carni e salumi nelle diverse fasce d\u2019et\u00e0. E a sondare l\u2019interesse dei consumAttori verso la\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">sostenibilit\u00e0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0delle produzioni zootecniche (impronta idrica e carbonica, consumo di suoli e impiego di OGM\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">nella produzione di materie prime per mangimi,\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>etc<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">.).\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La percezione del ruolo delle proteine<\/b>\u00a0nella nutrizione umana \u00e8 altres\u00ec oggetto del breve sondaggio. Si propone cos\u00ec ai partecipanti di esprimere i valori di maggior interesse nella scelta di cibi \u2018<i>on the go<\/i>\u2019 come gli\u00a0<i>snack<\/i>\u00a0e le barrette per sportivi. I quali spesso di fatto assolvono una funzione di sostituti dei pasti, con la complicit\u00e0 dei ritmi serrati della vita moderna.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La\u00a0<\/b><b>neofobia<\/b><b>\u00a0alimentare<\/b>\u00a0\u00e8 infine valutata, in relazione alle esperienze di viaggi o di esperienze sulla cucina extra-europea. Fa sorridere la\u00a0diffidenza di fantozziana memoria (v. copertina, la scena al ristorante giapponese nel film &#8216;Fantozzi&#8217;, 1975) con cui il\u00a0<i>sushi\u00a0<\/i>venne accolto in Italia, ora che \u00e8 tanto diffuso da ispirare imitazioni di matrice cinese e \u2018<i>fusion<\/i>\u2019.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La sorpresa<\/b>\u00a0\u00e8 dietro l\u2019angolo, nelle ultime domande. Quanto \u00e8 reale\u00a0la\u00a0neofobia italiana verso i cibi estranei alla cultura culinaria europea? \u00c8 forse possibile &#8211; come \u00e8 successo con il\u00a0<i>sushi<\/i>\u00a0e la cucina cinese &#8211;\u00a0che le\u00a0resistenze\u00a0oggi in apparenza\u00a0insuperabili\u00a0lasceranno invece spazio a nuovi\u00a0<i>trend<\/i>\u00a0alimentari?
