Un ottimo esempio del\u00a0<i>Made in Italy<\/i>\u00a0che pi\u00f9 ci piace.<\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><b>AmoreTerra, un progetto di filiera italiana biologica<\/b><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><b>AmoreTerra<\/b>\u00a0nasce nel 2012 su iniziativa di due giovani. Michele Lenge, che si impegna nella ricerca di aziende agricole biologiche in aree particolarmente vocate e laboratori artigiani capaci di preservare al meglio le qualit\u00e0 delle materie prime. E Andrea Costa, il quale apporta al progetto la strategia identitaria e di comunicazione.<\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><b>Le filiere<\/b><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\">\u00a0sono localizzate in diverse Regioni d\u2019Italia, dal Sud al Nord, in considerazione dei climi e delle esperienze produttive. I 160 prodotti ora a catalogo sono accomunati da uno stretto legame coi territori e i loro raccolti caratteristici. Cereali e legumi\u00a0<\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\">coltivati a rotazione, pasta e farine, taralli,<\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\">\u00a0<a href=\"https:\/\/www.greatitalianfoodtrade.it\/grissini\/ricetta-grissini\">grissini<\/a><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\">, biscotti. La #FilieraAmoreTerra trasforma i raccolti di 360 ettari di terre coltivati con passione, secondo il metodo biologico<\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\">.<\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><b>Le aziende agricole<\/b>\u00a0che partecipano a #FilieraAmoreTerra si trovano in aree lontane dalle arterie del traffico stradale, circondate dal verde o da altre aziende bio. In zone dalla grande tradizione agricola &#8211; come il Sud Italia, ove da millenni si producono cereali e legumi di qualit\u00e0 &#8211; o in montagna, dove il clima pi\u00f9 rigido riduce il disturbo dei parassiti.<\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><b>I laboratori<\/b>\u00a0<b>artigiani<\/b>\u00a0che trasformano le materie prime a loro volta si impegnano a rispettarne la natura, mediante processi lenti a temperature controllate. Cos\u00ec la pasta, ad esempio, viene essiccata sotto gli 80\u00b0 C in modo da preservare le vitamine del gruppo B e impedire la \u2018reazione di Maillard\u2019. Un processo chimico invece tipico delle paste industriali (a eccezione di De Cecco e pochi altri) che produce effetti negativi sulle qualit\u00e0 nutrizionali dei prodotti.<\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><b>Grani antichi, il progetto Luce<\/b><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><b>La ricerca della\u00a0<\/b><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><b>biodiversit\u00e0<\/b><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\">\u00a0<\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\">ha portato AmoreTerra ha a sviluppare il progetto Luce\u00ae.<\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\">\u00a09 variet\u00e0 di\u00a0<\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\">grani antichi<\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\">\u00a0<\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\">coltivati in montagna, sinergicamente, e macinati a pietra. (1)<\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><b>La montagna<\/b>\u00a0difende i grani dalla maggior parte dei parassiti (che sono assenti, per via del freddo) e mantiene i terreni idratati, oltre a proteggerli d\u2019inverno grazie alla neve. Gi\u00e0 in pochi anni le spighe hanno cambiato aspetto, le piante si sono adattate naturalmente al territorio ed \u00e8 aumentata la loro resa.<\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><b>La molitura\u00a0<\/b>avviene in un mulino a pietra di sasso dell\u2019800, a velocit\u00e0 ridotta (60 giri\/minuto). In modo da non surriscaldare il cereale e mantenerne inalterate le caratteristiche, senza neppure eliminare il prezioso germe di grano. Con la\u00a0Farina Luce\u00ae si produce una pasta artigianale essiccata a freddo, il cui sapore autentico non chiede altro che esser \u2018Pronta con un filo d\u2019olio\u2019.
