In commemorazione delle centinaia di migliaia di alberi strappati ai loro suoli dal maltempo, pochi mesi or sono, l&#8217;intraprendente cuoco friulano ha stoccato sottovuoto diverse variet\u00e0 di cortecce e vorrebbe ora coinvolgere i panifici locali per impiegarle negli impasti. Guidate da tre parole-chiave.\u00a0Bio,\u00a0<i>Made in Italy<\/i>,\u00a0integrale.<\/span><\/span><\/span><\/p>\n<h4><span style=\"color: #111111;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Biologico\u00a0e\u00a0<i>Made in Italy<\/i>, la coppia ideale<\/b><\/span><\/span><\/span><\/h4>\n<p><span style=\"color: #111111;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>L&#8217;osservatorio Immagino<\/b><\/span><\/span><\/span><span style=\"color: #111111;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0di Nielsen-Gs1, LINK mostra una sempre pi\u00f9 spiccata attenzione dei consumatori italiani verso gli alimenti considerati \u2018favorevoli alla\u00a0salute\u2019 e \u2018naturali\u2019<\/span><\/span><\/span><span style=\"color: #111111;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, nell\u2019accezione pi\u00f9 ampia<\/span><\/span><\/span><span style=\"color: #111111;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #111111;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il settore biologico<\/b><\/span><\/span><\/span><span style=\"color: #111111;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0continua a crescere a due cifre, +14%<\/span><\/span><\/span><span style=\"color: #000000;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0<\/span><\/span><\/span><span style=\"color: #111111;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">l&#8217;ultimo dato 2018. I ConsumAttori italiani finalmente privilegiano la filiera corta, per due essenziali ragioni:<\/span><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #111111;\">&#8211; matura la consapevolezza del ruolo delle scelte d\u2019acquisto sull&#8217;economia dei territori (#iovotocolportafoglio),<\/span><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #111111;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211; si ripone maggior fiducia sulla sicurezza degli alimenti\u00a0e dei https:\/\/www.greatitalianfoodtrade.it\/etichette\/controlli-il-ruolo-dellamministrazione-sanitaria\/\u00a0eseguiti in Italia rispetto alle \u2018cose (non sempre buone) del mondo\u2019.\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"color: #111111;\">\u2018<\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #111111;\"><i><b>Cibi e buoi dei Paesi tuoi<\/b><\/i><\/span><span style=\"color: #111111;\"><b>\u2019\u00a0<\/b><\/span><span style=\"color: #111111;\">\u00e8\u00a0dunque\u00a0il nuovo motto. Che poggia su solide basi, economiche e culturali. E trova conferma nelle sconfortanti notizie su\u00a0grani (e lenticchie) importati dai paesi freddi &#8211; Canada\u00a0<\/span><span style=\"color: #111111;\"><i>in primis<\/i><\/span><span style=\"color: #111111;\">\u00a0&#8211; ove glifosate e altri agrotossici vengono impiegati anche in fase post-raccolta. Laddove in Italia e in Europa tali\u00a0pratiche &#8211;\u00a0<\/span>che aumentano il rischio di residui chimici nei cibi &#8211;\u00a0<span style=\"color: #111111;\">sono invece vietate da anni.<\/span><\/span><\/span><\/span><\/p>\n<h4><span style=\"color: #111111;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Integrale al galoppo, \u2018<i>senza olio di palma<\/i>\u2019<\/b><\/span><\/span><\/span><\/h4>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #111111;\"><b>L\u2019integrale<\/b><\/span><span style=\"color: #111111;\">\u00a0galoppa su\u00a0<\/span>sfarinati, pasta e prodotti da forno<span style=\"color: #111111;\">.\u00a0<\/span>I ConsumAttori\u00a0cercano<span style=\"color: #111111;\">\u00a0alimenti\u00a0naturalmente ricchi di fibre, benefiche per l&#8217;intestino e il sistema immunitario. N<\/span>el solo comparto prima colazione,\u00a0<span style=\"color: #111111;\">i prodotti \u2018integrali\u2019 hanno registrato una crescita\u00a0+14,2% (2018). E non a caso, sulle loro etichette, il\u00a0<\/span><span style=\"color: #111111;\"><i>claim<\/i><\/span><span style=\"color: #111111;\">\u00a0&#8216;<\/span><span style=\"color: #111111;\"><i>integrale<\/i><\/span><span style=\"color: #111111;\">&#8216; \u00e8 il pi\u00f9 utilizzato dopo quello &#8216;<\/span><span style=\"color: #111111;\"><i>senza olio di palma<\/i><\/span><span style=\"color: #111111;\">&#8216;. (3)<\/span><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #111111;\"><b>L&#8217;olio di palma<\/b><\/span><span style=\"color: #111111;\">\u00a0\u00e8 quasi completamente scomparso dai prodotti in Italia, fatte salve rare eccezioni a marchi di Big Food (es. Ferrero, Kellogg\u2019s, Mondelez, Nestl\u00e9, Unilever). Grazie alla battaglia avviata nel 2014 da Great Italian Food Trade con Il fatto alimentare, che ha raggiunto il culmine con il parere scientifico Efsa 6.5.16 sui contaminanti cancerogeni e genotossici contenuti nel palma raffinato. E al coraggio\u00a0di Coop Italia, che nell\u2019immediatezza di tale parere ha eliminato da scaffale i prodotti a suo marchio che contenevano tale\u00a0grasso.<\/span><\/span><\/span><\/span><\/p>\n<h4><span style=\"color: #111111;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>&#8216;Semi-integrale&#8217;, il campione delle farine<\/b><\/span><\/span><\/span><\/h4>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #111111;\"><b>La farina di grano tenero<\/b><\/span><span style=\"color: #111111;\">\u00a0rimane in cima alle vendite (&gt;220mila ton\/anno). E tuttavia, tanto le sue moliture pi\u00f9 fini<\/span>\u00a0<span style=\"color: #111111;\">quanto quelle pi\u00f9 grezze<\/span>\u00a0<span style=\"color: #111111;\">registrano un calo degno di nota (<\/span>-7% i\u00a0tipi 0 e 00, -7,3% l\u2019integrale). \u00c8 il momento delle c.d. \u2018semi-integrali\u2019, che alla versatilit\u00e0 in cucina abbinano\u00a0apprezzabili\u00a0quantit\u00e0 di fibre.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #111111;\"><b>La farina tipo 2<\/b><\/span><span style=\"color: #111111;\">\u00a0ha quasi raddoppiato le vendite (<\/span>+82,6%), seguita dalla t<span style=\"color: #111111;\">ipo 1 (+38,6%). L\u2019offerta ha saputo incontrare e accompagnare la domanda, grazie a una comunicazione trasparente e a una marcat<\/span>a\u00a0<span style=\"color: #111111;\">riduzione del prezzo al dettaglio (-5,2% la tipo 1, -12% la tipo 2), che ora si attesta sui 2 \u20ac\/kg.<\/span><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #111111;\"><b>Sul fronte del<\/b><\/span><span style=\"color: #111111;\">\u00a0<\/span><span style=\"color: #111111;\"><b>grano duro<\/b><\/span><span style=\"color: #111111;\">, la semola integrale supera ogni record con una crescita formidabile di vendite (+247%) e prezzo al dettaglio (+5,5%), che ora si aggira attorno a 1,90 \u20ac\/kg. La\u00a0<\/span>semola non integrale cala invece di<span style=\"color: #111111;\">\u00a02,5% punti.
