Un\u2019alternativa sana e sostenibile \u00e8 offerta dalle\u00a0verdure croccanti in busta, possibilmente bio, cotte\u00a0magari\u00a0al forno anzich\u00e9 fritte.<\/span><\/span><\/span><\/p>\n<h4><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i><b>&#8216;Chips&#8217;<\/b><\/i><\/span><span style=\"font-size: medium;\"><b>, emblema della malnutrizione<\/b><\/span><\/span><\/span><\/h4>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Le \u2018<\/b><i><b>chips<\/b><\/i>\u2019\u00a0sono una delle poche categorie di alimenti in cui l\u2019olio di palma viene ancora ampiamente utilizzato, anche in Italia. Con effetti deteriori su:<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211; diritti umani e dell\u2019ambiente, poich\u00e9 tale grasso tropicale \u00e8 la prima causa di <em>land grabbing<\/em><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0(rapina delle terre) e\u00a0<\/span><\/span><\/span><span style=\"color: #0000ff;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">deforestazioni<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0a livello planetario,<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211; salute dei consumatori, a causa di grassi saturi e acido palmitico<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0che il palma contiene in ragione del 50%, a differenza di altri oli (es. girasole, girasole alto oleico) che ne sono invece privi. (1)<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La classifica del\u00a0<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>cibo-spazzatura<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0(HFSS,\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>High in Fats, Sugar and Sodium<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">) vede svettare le patatine\u00a0anche per il tenore di sale e il valore energetico, quasi impareggiabili nell\u2019universo alimentare. Valori grotteschi, del tutto incompatibili con le esigenze dietetiche della popolazione<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0e soprattutto invariati, al di l\u00e0 degli impegni assunti da\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>Big Food<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0in vari contesti per migliorare i profili nutrizionali<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0dei loro prodotti.<\/span><\/span><\/span><\/p>\n<h4><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>&#8216;(<\/b><\/span><span style=\"font-size: medium;\"><i><b>No more) chips<\/b>&#8216;<\/i><\/span><span style=\"font-size: medium;\"><b>, gli\u00a0<\/b><\/span><span style=\"font-size: medium;\"><i><b>snack<\/b><\/i><\/span><span style=\"font-size: medium;\">\u00a0<\/span><span style=\"font-size: medium;\"><b>vegetali alternativi<\/b><\/span><\/span><\/span><\/h4>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">Vari\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>snack<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0vegetali, alternativi alle patatine fritte, stanno emergendo a scaffale. Speriamo presto anche nei pubblici esercizi e nei distributori automatici<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">. Affinch\u00e9 di alternativa si possa parlare, tali prodotti devono rispondere ad alcuni essenziali requisiti:<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>&#8211; \u2018<\/b><i><b>convenience\u2019<\/b><\/i>. Il formato classico \u00e8 quello della busta da portare in borsa, senza richiedere n\u00e9 la conservazione in frigo n\u00e9 la cottura o il riscaldamento. Il prodotto deve prestarsi a venire inserito nei distributori automatici, oltrech\u00e9 in avancasse e scaffali di pubblici esercizi, per il consumo \u2018<i>on the go<\/i>\u2019,<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>&#8211; profili nutrizionali equilibrati<\/b>. Lo\u00a0<i>snack<\/i>\u00a0di per s\u00e9 viene inteso come \u2018rompi-digiuno\u2019, come spuntino d\u2019intermezzo tra i pasti, magari accompagnato a una bevanda. In quanto tale dev\u2019essere lieve, non deve provocare una reazione glicemica improvvisa n\u00e9 aggravare la dieta con sale non necessario.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La frutta fresca e le spremute\u00a0<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">&#8211; come pure gli \u2018<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>smoothies<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u2019, quando esse manchino &#8211; rappresentano un\u2019ottima soluzione. Idratano e dissetano (grazie all\u2019elevata quantit\u00e0 d\u2019acqua), forniscono vitamine e fibre sempre utili alla salute<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">. Ma a volte non bastano a soddisfare l\u2019esigenza anche psicologica di \u2018sgranocchiare qualcosa\u2019 per \u2018rompere il digiuno\u2019.<\/span><\/span><\/span><\/p>\n<h4><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i><b>Snack<\/b><\/i>\u00a0<b>vegetali croccanti, quali vantaggi<\/b><\/span><\/span><\/span><\/h4>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Gli\u00a0<\/b><i><b>snack<\/b><\/i>\u00a0<b>vegetali croccanti<\/b>, ad avviso che si scrive, hanno tutte le carte in regola per vivere il loro momento di crescita. Tali prodotti sono invero del tutto simili alle \u2018<i>chips<\/i>\u2019 tradizionali, nella \u2018<i>convenience<\/i>\u2019 che si associa al consumo occasionale in movimento. Ma si distinguono e svettano, rispetto alle \u2018patatine\u2019, sotto diversi aspetti:<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>&#8211; la cottura<\/b>\u00a0dei vegetali avviene spesso al forno, senza aggiunta di grassi. I prodotti pi\u00f9 interessanti sono quelli realizzati mediante processi di essiccazione che lasciano inalterate struttura e aroma della materia prima, limitandosi a eliminare la quasi totalit\u00e0 dell&#8217;acqua,<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>&#8211; i grassi<\/b>. Quando vengano aggiunte matrici grasse, si tratta in genere di oli di girasole o d\u2019oliva (i quali non presentano le problematiche del palma),<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>&#8211; i vegetali<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0diversi (es. topinambour, pomodori, peperoni, carote, barbabietole, zucche e zucchine), utilizzati in alternativa alle patate, contengono amido in quantit\u00e0 spesso inferiori. Si riduce cos\u00ec il rischio di formazione di acrilammide<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">,<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>&#8211; le fibre<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, offerte da questi prodotti in quantit\u00e0 apprezzabili<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">. Talora in aggiunta a vitamine, minerali e altre sostanze (es. licopene e carotenoidi, polifenoli) che possono qualificare alcuni prodotti come veri e propri\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>superfood<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">,<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>&#8211; gli additivi alimentari<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, in genere assenti. Tanto pi\u00f9 si rispetta la natura delle materie prime vegetali, tanto meno si ha bisogno di alterarne il sapore (col glutammato di sodio<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, oltrech\u00e9 col sale di regola aggiunto alle \u2018chips\u2019). N\u00e9 serve aggiungere conservanti, coloranti, correttori di acidit\u00e0, dei quali tutti possiamo lietamente fare a meno.<\/span><\/span><\/span><\/p>\n<h4><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Attenzione al sale<\/b><\/span><\/span><\/span><\/h4>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il sale<\/b><\/span><\/span><\/span><span style=\"color: #e4af0a;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00e8 l\u2019elemento a cui si deve sempre e comunque prestare la massima attenzione, anche nella scelta di tali\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>snack<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">.\u00a0Il sale deve infatti sempre tenuto sotto rigoroso controllo, negli spuntini come nei pasti, poich\u00e9 il suo apporto \u00e8 tuttora eccessivo &#8211;\u00a0assumiamo il doppio della soglia raccomandata dall\u2019OMS<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0&#8211;\u00a0ed estremamente pericoloso<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>Dario Dongo<\/i><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Note<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">(1) L\u2019olio di palma raffinato contiene oltretutto contaminanti di processo, cancerogeni e genotossici, in quantit\u00e0 6-10 volte superiori ad altri oli vegetali raffinati (mentre l\u2019olio extravergine d\u2019oliva ne \u00e8 completamente privo).<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">L\u2019Efsa, Autorit\u00e0 Europea per la Sicurezza Alimentare, ha lanciato l\u2019allarme tre anni fa, ma la Commissione europea e gli Stati membri hanno dolosamente omesso le doverose attivit\u00e0 di gestione di un grave rischio per la salute pubblica, quella dei bambini in particolare.
