(1) La situazione appare nel complesso migliorata ma i gravi pericoli per la salute di neonati e bambini, anche su alcuni prodotti di\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>Big Food<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, rimangono irrisolti.<\/span><\/span><\/span><\/p>\n<h4><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Acrilammide, allarme rosso<\/b><\/span><\/span><\/span><\/h4>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>L&#8217;acrilammide<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00e8 un contaminante di processo che si forma nella cottura a temperature (&gt;120 \u2018C) come frittura, cottura al forno e alla griglia. (2) La sostanza si forma nell\u2019ambito della c.d. \u2018<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>reazione di Maillard<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u2019, l\u2019interazione tra zuccheri (riducenti) e amminoacidi (asparagina) che spiega, tra l\u2019altro, la formazione di composti bruniti tipici dell\u2019abbrustolimento.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>L\u2019Agenzia Internazionale per la Ricerca sul Cancro<\/b>\u00a0(IARC, OMS) ha iniziato a considerare la sostanza intorno nei primi anni \u201890, classificandola come tossica e probabile cancerogena. Il JECFA, \u2018<i>Joint FAO\/WHO Expert Committee on Food Additives<\/i>\u2019, ha quindi avviato un processo di monitoraggio e analisi del rischio. Rilevando la sua presenza in alcuni materiali impiegati nei processi industriali (es. adesivi, materiali plastici e imballaggi) e negli alimenti cotti. Oltre a valutarne la genotossicit\u00e0 e la neurotossicit\u00e0.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>I livelli di acrilammide<\/b>\u00a0riscontrati nei prodotti alimentari in Europa, a seguito di tre successive campagne di monitoraggio, hanno indotto la Commissione europea a demandare all\u2019Efsa (<i>European Food Safety Authority<\/i>) un\u2019apposita valutazione. (3) L\u2019Autorit\u00e0 Europea per la Sicurezza Alimentare, con proprio parere scientifico 4.6.15, ha associato al consumo di cibi contenenti acrilammide il rischio di sviluppare tumori nei consumatori di tutte le fasce di et\u00e0. Evidenziando la peculiare vulnerabilit\u00e0 dei bambini, in ragione del maggiore impatto della sostanza tossica sulla loro ridotta massa corporea. Allarme rosso, per i tossicologi.<\/span><\/span><\/span><\/p>\n<h4><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Salute dei bambini vs. interessi di\u00a0<\/b><i><b>Big Food<\/b><\/i><b>, le priorit\u00e0 di Bruxelles<\/b><\/span><\/span><\/span><\/h4>\n<p><span style=\"color: #ff0000;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u2018<i><b>Gli esperti del gruppo scientifico<\/b><\/i>\u00a0<i>EFSA sui contaminanti nella catena alimentare (CONTAM) hanno ribadito le loro precedenti valutazioni in base alle quali l\u2019acrilammide presente negli alimenti pu\u00f2 aumentare il rischio di sviluppare il cancro nei consumatori per tutte le fasce d\u2019et\u00e0<\/i>\u2019 (Efsa, 4.6.15)<\/span><\/span><\/span><span style=\"color: #222222;\">\u00a0<\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>La dose tollerabile giornaliera<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0(<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>Acceptable Daily Intake<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, ADI) non pu\u00f2 venire definita poich\u00e9 trattasi di sostanza genotossica, vale a dire capace di danneggiare il DNA a qualsiasi livello di esposizione. Al pari dei contaminanti di processo degli oli vegetali raffinati, che l\u2019olio di palma contiene<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0in quantit\u00e0 6-10 volte superiore rispetto agli altri (secondo parere Efsa 3.5.16).<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>I gravi rischi<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0per la salute pubblica sono stati trascurati dalla Commissione in entrambi i casi. Nel caso dell\u2019olio di palma, il Commissario uscente ha dolosamente omesso<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0alcun provvedimento di gestione del rischio. Nel caso dell\u2019acrilammide,\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">la Commissione europea, con il reg. UE 2158\/2017, ha definito \u2018valori guida\u2019 di riferimento ai cui i produttori dovrebbero attenersi. Senza tuttavia definire limiti prescrittivi n\u00e9 divieti di commercializzazione di alimenti a rischio. N\u00e9 prescrivere sanzioni e sequestri.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Neonati e bambini<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0sono le categorie pi\u00f9 a rischio. Nel caso dell\u2019olio di palma<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0come in quello dell\u2019acrilammide. La Commissione europea &#8211; secondo voci di corridoio raccolte dalla ONG \u2018<\/span><\/span><\/span><span style=\"color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"https:\/\/www.safefoodadvocacy.eu\" target=\"_blank\" rel=\"noopener\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>Safe Food Advocacy Europe<\/i><\/span><\/span><\/a><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u2019<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0&#8211; vorrebbe innalzare la soglia di acrilammide ammessa sui prodotti destinati all\u2019infanzia. Da 40 a 50 \u00b5g\/kg, a servizio di\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>Big Food<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0anzich\u00e9 della salute dei pi\u00f9 piccoli.<\/span><\/span><\/span><\/p>\n<h4><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Acrilammide nei cibi, gli alimenti a rischio. Indagine di AltroConsumo\u00a0<\/b><\/span><\/span><\/span><\/h4>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Gli alimenti a rischio\u00a0<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">acrilammide sono quelli ricchi di amidi, che contengono zuccheri e l\u2019amminoacido asparagina, fritti o cotti a alte temperature fino ad assumere il tipico aspetto abbrustolito. Patate e altri vegetali<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, pane, pizza,\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>cracker<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, biscotti e altri prodotti da forno. La scelta degli ingredienti, la modalit\u00e0 di conservazione e lavorazione di materie prime, semilavorati e prodotti finiti &#8211; oltre alle caratteristiche (tempi, modi e temperature) del processo termico &#8211; sono i fattori che rilevano nella formazione di acrilammide negli alimenti.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Altroconsumo<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0ha sottoposto ad analisi 69 prodotti alimentari venduti in Italia, nell\u2019ambito di un\u2019indagine condotta su 532 referenze dalle associazioni di consumatori che aderiscono a\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>Euroconsumers<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">. (4) Gli esiti analitici hanno evidenziato il superamento dei valori soglia previsti dal reg. UE 2017\/2158 su tre prodotti, l\u2019omogeneizzato\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Mellin<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0(gruppo\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">Danone<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">) di prugna con mela nonch\u00e9 le patatine (<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>chips<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">) di\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Crik-Crok<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0e\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Cipster<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0(gruppo\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">Mondelez<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">). Marchi, i due ultimi, che a nostra volta abbiamo gi\u00e0 denunciato per\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>claim<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0ed etichette fuorilegge<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, oltrech\u00e9 per gli scadenti profili nutrizionali. Valori molto elevati di contaminazione, quasi doppi rispetto alle patatine fritte, sono stati riscontrati anche sulle\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>chips<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0di verdura a marchi\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Tyrrell\u2019s<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0(<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>veg crisps<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, 100 g) e\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Kettle Chips<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u00a0(<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>veg chips sea salt<\/i><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, 100 g).<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Alimenti pericolosi<\/b><\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">, genotossici e cancerogeni, rivolti alla prima infanzia nel caso Mellin e a un pubblico giovanile composto anche da bambini negli altri casi, risultano dunque in libera vendita. Ci\u00f2 esprime la gravissima irresponsabilit\u00e0\u00a0<\/span><\/span><\/span><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">degli operatori coinvolti, da un lato. E l\u2019altrettanto grave irresponsabilit\u00e0 dei Servizi Igiene Alimenti e Nutrizione (SIAN) delle ASL competenti. I quali tutti avrebbero dovuto dedicare peculiare attenzione all\u2019applicazione del regolamento tale rischio proprio sui cibi pi\u00f9 a rischio &#8211; a partire dai prodotti a base di patate &#8211; e quelli rivolti all\u2019infanzia. Monitoraggi, campionamenti, analisi, azioni correttive. Chi li ha visti?<\/span><\/span><\/span><\/p>\n<h4><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Acrilammide, altre fonti di esposizione. Fumo e sigarette elettroniche\u00a0<\/b><\/span><\/span><\/span><\/h4>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Il fumo e le\u00a0<\/b><b>sigarette elettroniche<\/b>\u00a0costituiscono, a loro volta, fonti di esposizione alla sostanza tossica. La teoria secondo cui \u2018svapare\u2019 aiuterebbe i fumatori a limitare i danni causati dal fumo \u00e8 stata smentita dalla \u2018<i>University of California \u2013 San Francisco<\/i>\u2019 (UCSF). (5) Lo studio clinico randomizzato ha coinvolto 101\u00a0<i>teenager<\/i>, et\u00e0 media 16,4 anni. 67 utilizzatori di sole sigarette elettroniche, 16 di sigarette elettroniche e convenzionali, 20 non fumatori n\u00e9 \u2018svapatori\u2019.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #ff0000;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">\u2018<i><b>Gli adolescenti\u00a0<\/b><\/i><i>devono venire avvertiti, il vapore prodotto dalle sigarette elettroniche non \u00e8 innocuo vapore acqueo, ma in realt\u00e0 contiene alcune delle stesse sostanze chimiche tossiche presenti nel fumo delle sigarette tradizionali. Gli adolescenti dovrebbero inalare aria, non prodotti che contengono tossine<\/i>\u2019 (Prof. Marc L. Rubinstein, UCSF, Dipartimento di Pediatria).<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Le analisi<\/b>\u00a0delle urine hanno rivelato la presenza di sostanze tossiche cancerogene anche negli adolescenti che si \u2018limitavano\u2019 a \u2018svapare\u2019. I cui organismi contenevano benzene, ossido di etilene, acrilonitrile, acroleina e acrilammide in quantit\u00e0 tre volte superiori ai ragazzi che non fumavano n\u00e9 \u2018svapavano\u2019.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><i>Dario Dongo e Ylenia Desiree\u00e8 Patti Giammello<\/i><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Note<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\">(1) Cfr.\u00a0reg.
