L&#8217;attribuzione di questo fenomeno all&#8217;irrigidimento delle pareti vascolari &#8211; da cui deriva una riduzione dell&#8217;afflusso di sangue al cervello &#8211; \u00e8 stata ulteriormente approfondita, con nuove evidenze di tutt&#8217;altro tenore.<\/p>\n<p><strong>Gli effetti nocivi dell\u2019eccesso di sodio<\/strong>\u00a0&#8211; come dimostra lo studio in esame &#8211; sono infatti determinati da una ridotta produzione di nitrossido da parte delle cellule endoteliali dei vasi cerebrali. Con due conseguenze:<\/p>\n<p>&#8211; riduzione del flusso di sangue (ipoperfusione) al cervello e<\/p>\n<p>&#8211; alterazione con depositi patologici a carico di una proteina (tau) collegata all&#8217;insorgenza dell&#8217;Alzheimer.<\/p>\n<p><strong>L&#8217;evidenza \u00e8 stata confermata<\/strong>\u00a0anche mediante somministrazione, ai topi oggetto della ricerca, di un anticorpo che favorisce la stabilit\u00e0 della proteina tau. Il meccanismo protettivo dell\u2019anticorpo ha disattivato gli effetti della dieta ricca di sale, impedendo lo sviluppo della demenza.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"La_responsabilita_dellindustria_alimentare\"><\/span>La responsabilit\u00e0 dell&#8217;industria alimentare<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Ridurre i consumi di sale<\/strong>\u00a0\u00e8 estremamente difficile per chi consumi molti alimenti confezionati. Poich\u00e9 l&#8217;industria alimentare continua ad aggiungere ai cibi quantit\u00e0 eccessive di sodio, mettendo cos\u00ec in pericolo la salute dei consumatori. L&#8217;ultimo allarme proviene da una ricerca del Joint Research Center (JRC) per conto della Commissione europea. Laddove si \u00e8 evidenziato come oltre la met\u00e0 degli alimenti destinati ai bambini e ai ragazzi contenga troppo sale.<\/p>\n<p><strong>Oltre a piatti pronti<\/strong>\u00a0e\u00a0<em>snack<\/em>, notoriamente troppo salati, la minaccia si annida anche in alimenti &#8216;speciali&#8217;.
