Una rivisitazione che ha gi\u00e0 donato al gusto degli intenditori la cheesecake al basilico genovese DOP.<\/p>\n<p><strong>Alla nomina<\/strong> del vincitore\u00a0del\u00a0<em>contest<\/em>, stabilita dalla giuria presieduta da Ivano Ricchebono, segue la degustazione delle due ricette finaliste.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Il_gioiello_DOP_ligure\"><\/span>Il gioiello DOP ligure<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Il basilico genovese DOP<\/strong>\u00a0\u00e8 coltivato sul versante a mare della Liguria. Ha caratteristiche inconfondibili. Le foglie ovali, piccole e tenere, sprigionano un aroma intenso, privo del sentore di menta.<\/p>\n<p><strong>Viene coltivato<\/strong>\u00a0dalle aziende agricole liguri, che garantiscono qualit\u00e0 e provenienza del prodotto, ottenuto nel rispetto del Disciplinare di produzione e secondo i metodi tradizionali.<\/p>\n<p><strong>Due sono le tipologie<\/strong>\u00a0di coltivazione del basilico genovese DOP, in funzione della destinazione d&#8217;uso della piantina,<\/p>\n<p><strong>&#8211; per il consumo fresco<\/strong>, viene coltivato tutto l&#8217;anno in serra e raccolto a mano, pianta per pianta. Il prodotto, accompagnato dal logo della DOP e quello del produttore, viene venduto nel tipico <em>bouquet<\/em>, composto dalla piantina intera completa di radici e terra,<\/p>\n<p><strong>&#8211; per la trasformazione industriale<\/strong>\u00a0e l&#8217;impiego quale ingrediente di altri prodotti alimentari, viene coltivato prevalentemente all&#8217;aperto in estate e raccolto a sfalcio, prelevando soltanto la parte apicale della pianta, la pi\u00f9 tenera e profumata. In questi casi, la DOP <a href=\"https:\/\/www.foodagriculturerequirements.com\/notizie\/ingredienti-dop-e-igp-in-etichetta-e-pubblicita-di-altri-prodotti-chiarimenti-mipaaft\" target=\"_blank\" rel=\"noopener noreferrer\">deve venire citata tra gli ingredienti<\/a> con il nome per esteso (basilico genovese DOP). In caso contrario, \u00e8 un&#8217;altra pianta aromatica.
