La combinazione ideale, che coniuga sapore e salute, si chiama Umami Mediterraneo. Corrisponde a saporito, sapido. Scoperto dai giapponesi \u00e8 riconoscibile anche in alcuni alimenti tipici della dieta mediterranea: pomodori, parmigiano reggiano, per esempio.<\/p>\n<p><strong>Mediterranean Umami<\/strong> \u00e8 proprio la declinazione in versione <em>Med<\/em> del sapore capace di sostituire il sale mantenendo l&#8217;appetibilit\u00e0 dell&#8217;alimento. La formulazione commerciale \u00e8 della israeliana <em>Salt of the Earth<\/em>, che commercializza sale dal 1922.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Sodio_ridotto_fino_al_45\"><\/span>Sodio ridotto fino al 45%<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>L&#8217;Umami mediterraneo<\/strong> inserito in ricetta quale sostituto del sale &#8211; in rapporto 1:1 &#8211; consente di ridurre il sodio fino al 45%. L&#8217;azienda ha sviluppato dapprima la versione liquida, poi quella in polvere, pi\u00f9 adatta all&#8217;industria alimentare.<\/p>\n<p><strong>Gli ingredienti<\/strong> del Mediterranean Umami sono pochi e semplici. Purtroppo, l&#8217;elenco non viene comunicato con chiarezza. Lo deduciamo dalla confezione della versione liquida <a href=\"https:\/\/www.saltoftheearthltd.com\/umami-essence-sea-salt\/\">mostrata<\/a> nel sito aziendale:<\/p>\n<p>&#8211; concentrato di pomodoro,<\/p>\n<p>&#8211; acqua,<\/p>\n<p>&#8211; sale marino,<\/p>\n<p>&#8211; funghi,<\/p>\n<p>&#8211; estratto di alghe.<\/p>\n<p><strong>Certificato<\/strong> kosher e halal, Mediterranean Umami \u00e8 adatto a una dieta vegana e non contiene ingredienti artificiali, OGM, glutine, MSG (glutammato monosodico) o estratti di lievito.<\/p>\n<p><strong>Un&#8217;occasione preziosa<\/strong> di crescita per l&#8217;industria alimentare, le cui ricette squilibrate sono ormai evidenti anche ai consumatori.
