(1)<\/p>\n<p>Un recente studio (Canelli et al., 2020), su\u00a0<em>Frontiers in Nutrition<\/em>, considera la biodisponibilit\u00e0 di proteine e lipidi forniti da questa microalga. E le sue possibili applicazioni per migliorare le propriet\u00e0 nutrizionali e salutistiche dei vari alimenti. Sia pure in assenza di consenso scientifico sulla loro definizione, come pure su quella di\u00a0<em>functional food<\/em>, a fronte di uno straordinario numero di variabili.<\/p>\n<p><strong>Le microalghe<\/strong>\u00a0possono venire inquadrate in questo ambito sia per l\u2019elevata digeribilit\u00e0 delle proteine e l\u2019ampia dotazione di\u00a0aminoacidi essenziali, acidi grassi\u00a0Omega 3, fibre alimentari, sia per la variet\u00e0 di composti bioattivi (<em>phytochemicals<\/em>) in grado di\u00a0prevenire e contrastare numerose patologie. (2) La rinnovabilit\u00e0 delle fonti e la sostenibilit\u00e0 delle produzioni sono oltretutto preziose per la\u00a0<em>food security\u00a0<\/em>e la\u00a0<em>nutrition security<\/em>, in particolare nelle diete #Veg (vegetariana, vegana).<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Chlorella\"><\/span><em>Chlorella<\/em><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><em><strong>Chlorella<\/strong><\/em>\u00a0domina il mercato delle microalghe &#8211; insieme a\u00a0Spirulina\u00a0(che \u00e8 in effetti un cianobatterio, come si \u00e8 visto)\u00a0&#8211; e si caratterizza sotto diversi aspetti.<\/p>\n<p><strong>A un elevato tenore\u00a0proteico<\/strong> si aggiunge un\u2019importante concentrazione di betaglucani, fibre prebiotiche efficaci nel ridurre il c.d. \u2018colesterolo cattivo\u2019 (LDL) nel sangue, ridurre i radicali liberi e stimolare il\u00a0sistema immunitario. (3)<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Nutrienti_e_biodisponibilita\"><\/span>Nutrienti e biodisponibilit\u00e0<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Il recente studio<\/strong>\u00a0di Canelli et al. (2020) ha esaminato la composizione e biodisponibilit\u00e0 dei nutrienti contenuti in\u00a0<em>Chlorella<\/em>\u00a0coltivata in laboratorio, a confronto con una decina di prodotti disponibili in commercio. I valori medi di proteine e acidi grassi sono apprezzabili, 40% e 7% rispettivamente.<\/p>\n<p><strong>I ricercatori<\/strong>\u00a0hanno espresso una valutazione molto favorevole dei rapporti tra acidi grassi Omega-6\/Omega-3, polinsaturi\/saturi, ipocolesterolemici\/ipercolesterolemici. Oltre agli indici aterogenico e trombogenico, i quali esprimono le virt\u00f9 della microalga nel prevenire la formazione di placche aterosclerotiche e trombosi.<\/p>\n<p><strong>La disponibilit\u00e0<\/strong>\u00a0delle proteine di\u00a0<em>Chlorella<\/em>\u00a0\u00e8 significativa e promettente, mentre \u00e8 opportuno sviluppare nuove strategie per aumentare il rilascio dei lipidi nell\u2019organismo. (4)<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Applicazioni_di_Chlorella_in_varie_categorie_di_alimenti\"><\/span>Applicazioni di <em>Chlorella<\/em> in varie categorie di alimenti<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>L\u2019aggiunta di\u00a0<em>Chlorella<\/em><\/strong>\u00a0in varie categorie di alimenti ha mostrato la possibilit\u00e0 di migliorare non solo le propriet\u00e0 nutrizionali ma anche quelle sensoriali dei prodotti. Alcuni esempi di applicazioni:<\/p>\n<p><strong>&#8211; biscotti\u00a0<\/strong>innovativi e attraenti per il colore (v. Fig. 2), con una\u00a0texture\u00a0particolarmente gradita, (5)<\/p>\n<p><strong>&#8211; grissini<\/strong>. Riduzione dell\u2019imbrunimento dovuto alla cottura, arricchimento in ferro e selenio, (6)<\/p>\n<p><strong>&#8211; formaggi<\/strong>. Apprezzabile impatto sulla salute, senza modificare le caratteristiche del prodotto, (7)<\/p>\n<p><strong>&#8211; yogurt<\/strong>. Aumento della vitalit\u00e0 dei microrganismi probiotici. (8)<\/p>\n<h2><span class=\"ez-toc-section\" id=\"_Auxenochlorella_prototeichodes\"><\/span>\u00a0<em>Auxenochlorella prototeichodes<\/em><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><em><strong>Auxenochlorella prototeichodes<\/strong><\/em>, \u2018cugina\u2019 di\u00a0<em>Chlorella<\/em>, \u00e8 stata utilizzata\u00a0in combinazione con soia per ottenere un prodotto sostitutivo della carne con interessanti caratteristiche fisiche e nutrizionali. (9) L\u2019uso dell\u2019alga ha reso il prodotto pi\u00f9 attraente, grazie ai carotenoidi. Oltre a migliorarne il profilo lipidico e aggiungere vitamine (gruppo B, E). (10)<\/p>\n<p><strong>L\u2019utilizzo\u00a0delle microalghe<\/strong> permette di realizzare prodotti con un migliore livello nutrizionale. (11) Si presta bene alla combinazione con la soia, la quale a sua volta esercita funzioni tecnologiche (prima ancora che nutrizionali). Con l\u2019idea di sodisfare i bisogni nutrizionali e sensoriali dei consumatori vegetariani e vegani, oltrech\u00e9\u00a0<em>flexitarian<\/em>. (12)<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Conclusioni_provvisorie\"><\/span>Conclusioni provvisorie<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong><em>Chlorella<\/em> e <em>Auxenochlorella<\/em><\/strong>\u00a0sono microalghe promettenti per la nutrizione umana, grazie alla ricchezza in proteine, Omega3 e fitocomplessi preziosi per la salute. La loro versatilit\u00e0 d\u2019impiego ne consente l\u2019inserimento nelle formule (o ricette) di una gran variet\u00e0 di alimenti. Sia nell\u2019ambito dei processi produttivi, sia anche in fase di consumo dei vari cibi.<\/p>\n<p><strong>La prospettiva<\/strong>\u00a0di garantire e migliorare la nutrizione umana e animale attraverso alghe e microalghe trova ulteriore stimolo in una serie di progetti europei di ricerca nel programma Horizon 2020, come si \u00e8 visto.
