Vale a dire rispetto di ecosistemi, benessere animale, comunit\u00e0 locali. Questi valori a loro volta superano il dilemma onnivoro e vengono spesso trascurati, purtroppo, anche nell\u2019offerta di cibi\u00a0Veg\u00a0ultraprocessati. I giga-investimenti sulla\u00a0<em>Lab meat<\/em>, del resto, mirano a sostituire anzich\u00e9 remunerare il lavoro nei campi.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Transizione_ecologica\"><\/span>Transizione ecologica<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>La sostenibilit\u00e0<\/strong>\u00a0di produzioni e consumi ha un ruolo centrale nei\u00a0<em>Sustainable Development Goals<\/em>\u00a0(SDGs) in Agenda ONU 2030. Non ha nulla a che vedere con la produzione di carni in America latina, ma neppure con quelle di ingredienti\u00a0Veg\u00a0come <a href=\"https:\/\/www.egalite.org\/buycott-petizione\/\" target=\"_blank\" rel=\"noopener noreferrer\">soia OGM<\/a>, olio di palma, frutti tropicali appestati di agrotossici.<\/p>\n<p><strong>L\u2019agroecologia<\/strong>\u00a0\u00e8 il modello seguito dalla rete di agricoltori e allevatori inglesi di\u00a0<em>Regenuary<\/em>. I loro prodotti di origine vegetale e animale &#8211; ottenuti con metodi rigenerativi, senza compromessi &#8211; vengono anche consegnati a domicilio, in\u00a0<em>eco-pack<\/em>. E contribuiscono a recuperare gli ecosistemi gravemente minacciati dall\u2019agricoltura industriale e altre attivit\u00e0 antropiche, in aree limitrofe a quelle ove si trovano i propri consumatori e utenti.<\/p>\n<h2><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-53794\" src=\"http:\/\/www.foodtimes.eu\/wp-content\/uploads\/2021\/02\/img-ahgroecologia.jpg\" alt=\"\" width=\"640\" height=\"400\" srcset=\"https:\/\/www.foodtimes.eu\/wp-content\/uploads\/2021\/02\/img-ahgroecologia.jpg 640w, https:\/\/www.foodtimes.eu\/wp-content\/uploads\/2021\/02\/img-ahgroecologia-300x188.jpg 300w, https:\/\/www.foodtimes.eu\/wp-content\/uploads\/2021\/02\/img-ahgroecologia-150x94.jpg 150w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/h2>\n<h2><span class=\"ez-toc-section\" id=\"Agroecologia_e_pascoli_rigenerativi\"><\/span>Agroecologia e pascoli rigenerativi<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>I pascoli<\/strong>\u00a0forniscono una serie di servizi ecosistemici, dalla regolazione e lo stoccaggio dei flussi d&#8217;acqua (Schlesinger et al.,2000; Havstad et al., 2007) al ciclo dei nutrienti e il sequestro di carbonio (Schuman et al., 1999; Conant e Paustian, 2002; Morgan et al., 2016). Contribuiscono a contrastare il cambiamento climatico grazie alla capacit\u00e0 di immagazzinare oltre il 10% della biomassa di carbonio totale, fino al 30% del carbonio organico totale del suolo (Scurlock e Hall, 1998).<\/p>\n<p><strong>Gli animali<\/strong>\u00a0al pascolo leggero e moderato, nel brucare e cio\u00e8 defogliare, influiscono sui tassi di fotosintesi delle piante, il rapporto radice \/ germoglio, l\u2019allocazione del carbonio, la massa radicale funzionale e gli essudati delle radici delle piante, con impatti favorevoli sui cicli biogeochimici dei terreni (Johnson e Matchett, 2001; Gao et al., 2008; Giese et al., 2009; Chen et al., 2015; Gong et al., 2015). La rigenerazione dei tessuti vegetali cos\u00ec migliora l&#8217;ecosistema del carbonio (Shao et al., 2013) e la produttivit\u00e0 delle piante (Holland et al., 1992; Zhang et al., 2015).<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Consumi_alimentari_sostenibili\"><\/span>Consumi alimentari sostenibili<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>L\u2019equilibrio\u00a0nei consumi<\/strong> alimentari \u00e8 indispensabile, ed \u00e8 urgente rivedere i sistemi di allevamento e agricoltura rispettando gli ecosistemi esistenti mantenendoli in equilibrio. La stessa FAO ha sollecitato l\u2019adozione di apposite misure, in zootecnia, per mitigarne l\u2019impatto ambientale.<\/p>\n<p><strong>Verosimilmente<\/strong>, come si \u00e8 gi\u00e0 condiviso, il carrello della spesa sostenibile continuer\u00e0 ad accogliere una variet\u00e0 di alimenti di origine animale. Uova e pollame <em>in primis<\/em>, latte e latticini, carni suine, pesce azzurro e di acquacoltura.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-53802\" src=\"http:\/\/www.foodtimes.eu\/wp-content\/uploads\/2021\/02\/img2.jpg\" alt=\"\" width=\"640\" height=\"400\" srcset=\"https:\/\/www.foodtimes.eu\/wp-content\/uploads\/2021\/02\/img2.jpg 640w, https:\/\/www.foodtimes.eu\/wp-content\/uploads\/2021\/02\/img2-300x188.jpg 300w, https:\/\/www.foodtimes.eu\/wp-content\/uploads\/2021\/02\/img2-150x94.jpg 150w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n<h2><span class=\"ez-toc-section\" id=\"Conclusioni_provvisorie\"><\/span>Conclusioni provvisorie<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Agricoltura biologica<\/strong>\u00a0e sovranit\u00e0 alimentare &#8211; in una parola,\u00a0<em>Regenuary<\/em>\u00a0&#8211; esprimono un orizzonte rivoluzionario ma realistico. Certo pi\u00f9 facile a realizzarsi, nei decenni a venire, rispetto all\u2019abbandono di produzioni e consumi di alimenti di origine animale.<\/p>\n<p><strong>Ed \u00e8 forse<\/strong>\u00a0perci\u00f2 che il\u00a0<em>mainstream media\u00a0<\/em>distrae le masse da questi obiettivi &#8211; i quali implicano, tra l\u2019altro, la redistribuzione della ricchezza in un settore primario &#8211; con operazioni di\u00a0<em>viral deception<\/em>\u00a0come il fenomeno\u00a0<em>meat sounding<\/em>, il cui obiettivo \u00e8 invece quello di promuovere cibi di laboratorio prodotti da pochi colossi industriali.<\/p>\n<p><em>Dario Dongo e Giulia Pietrollini<\/em><\/p>\n<h2><span class=\"ez-toc-section\" id=\"Bibliografia\"><\/span><strong>Bibliografia<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Conant, R.T., and K.
