impresa costituita a Mede (PV) nel 1984 che fornisce soluzioni innovative per lo studio, la caratterizzazione e l\u2019autenticazione di materiali e sostanze &#8211; ha trasformato questa teoria in una tecnica e ha sviluppato un prodotto commerciale per poterla applicare.<\/p>\n<p><strong>La strumentazione\u00a0<\/strong>sviluppata da Stelar (SMARtracer&#x2122; e Spinmaster) permette di caratterizzare le matrici elaborando i loro profili NMRD (<em>nuclear magnetic resonance dispersion<\/em>). I diversi studi condotti su varie matrici alimentari (v. paragrafo successivo) dimostrano la sensibilit\u00e0 dei profili &#8211; e quindi, la loro capacit\u00e0 di rilevare vari fenomeni come disidratazione, ossidazione, maturazione, deterioramento. Oltre all\u2019aggiunta di additivi, coadiuvanti e altre sostanze.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Matrici_analizzate_per_la_verifica_di_autenticita_degli_alimenti\"><\/span>Matrici analizzate per la verifica di autenticit\u00e0 degli alimenti<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>La RMN<\/strong> a ciclo di campo\u00a0\u00e8 stata utilizzata per caratterizzare e verificare l\u2019autenticit\u00e0 di una serie di matrici. La bibliografia scientifica ha validato l\u2019efficacia del metodo su suoli e i\u00a0<em>terroir<\/em>, (1) ma anche su alimenti trasformati e non. Frutta, cereali e prodotti derivati (2,3), carni, (4) aceto balsamico tradizionale (5) e vino. (6)<\/p>\n<p><strong>Un ambito di indagine<\/strong>\u00a0promettente riguarda i formaggi. Gli studi eseguiti su\u00a0Parmigiano Reggiano e Fiore Sardo DOP (7,8) suggeriscono tra l\u2019altro la possibilit\u00e0 di utilizzare questa tecnica analitica per identificare le mozzarelle realizzate con additivi acidificanti e\/o cagliate, invece di latte e caglio naturale secondo tradizione (9,10).<\/p>\n<p><strong>Il\u00a0metodo\u00a0<\/strong>FFC NMR si distingue favorevolmente rispetto ad alcune analisi chimiche tradizionali per il suo approccio non invasivo. I campioni possono quindi venire analizzati con rapidit\u00e0, dopo avere caratterizzato le matrici originali, senza bisogno di estrazioni e purificazioni che comportano maggior tempo, costi e\u00a0consumi di energia.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Lavori_in_corso\"><\/span>Lavori in corso<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Stelar<\/strong>\u00a0&#8211; in collaborazione con <a href=\"https:\/\/www.portocontericerche.it\">Porto Conte Ricerche S.r.l.<\/a>, societ\u00e0 che gestisce la sede di Alghero (SS) del Parco scientifico e tecnologico della Sardegna &#8211; sta ora lavorando alla ottimizzazione e standardizzazione del metodo\u00a0<em>Fast-Field Cycling<\/em>\u00a0NMR. In collaborazione con i professori Pellegrino Conte dell\u2019Universit\u00e0 di Palermo (Agricoltura, Scienze Agrarie, Alimentari e Forestali), Jose Pedro Sebastiao dell\u2019Univesit\u00e0 di Lisbona (dipartimento di fisica) e Danuta Kruk dell\u2019universit\u00e0 di Olzstyn.<\/p>\n<p><strong>I lavori in corso<\/strong>\u00a0sono accessibili anche sul <a href=\"https:\/\/bit.ly\/3rx7Jat\" target=\"_blank\" rel=\"noopener noreferrer\">canale YouTube<\/a> dell\u2019impresa pavese, ove si trovano i\u00a0<em>webinar<\/em>\u00a0organizzati nell\u2019ambito del programma <a href=\"https:\/\/www.cost.eu\" target=\"_blank\" rel=\"noopener noreferrer\">COST<\/a> (<em>European Cooperation in Science and Technology<\/em>), in Horizon 2020.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Controlli_ufficiali_e_di_parte_terza_blockchain\"><\/span>Controlli ufficiali\u00a0e\u00a0di parte terza,\u00a0<em>blockchain<\/em><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>La prospettiva\u00a0<\/strong>di applicazione di questo metodo, come di quello sviluppato da SSICA (Stazione Sperimentale per l\u2019Industria delle Conserve Alimentari) per identificare l\u2019origine del pomodoro nelle conserve (11) &#8211; \u00e8 duplice:<\/p>\n<p><strong>&#8211; offrire alle autorit\u00e0\u00a0<\/strong>strumenti innovativi e affidabili per i controlli ufficiali sulla filiera agroalimentare e la prevenzione delle frodi,<\/p>\n<p><strong>&#8211; inserire\u00a0le analisi\u00a0<\/strong>nelle garanzie offerte dagli operatori attraverso sistemi di\u00a0<em>blockchain<\/em>\u00a0pubblica. (12)<\/p>\n<p><strong>Il\u00a0campionamento<\/strong>\u00a0di prodotti prelevati sul mercato da parti terze e l\u2019inserimento dei risultati delle analisi in registri informatici condivisi e incorruttibili (es.
