Ai casi storici di edulcoranti come saccarina e aspartame, tuttora in uso, si aggiungono quelli pi\u00f9 recenti dei nanomateriali. Come\u00a0il biossido di titanio, dichiarato mutageno da EFSA (2021), e il biossido di silicio in attesa di nuove valutazioni.<\/p>\n<p><strong>Il rischio\u00a0<\/strong>non pu\u00f2 dunque venire escluso, su alcune sostanze, e la Commissione europea non pare aver fretta nell\u2019applicare il principio di precauzione. Alcuni additivi,\u00a0oltretutto, abituano\u00a0la popolazione &#8211; i bambini, in particolare &#8211;\u00a0\u00a0a sapori artificiali e lontani\u00a0da una sana, naturale alimentazione. Pochi additivi sono davvero necessari, per garantire la sicurezza alimentare rispetto ai rischi di proliferazione di batteri patogeni in alcuni prodotti di origine animale.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Voglia_di_clean_label\"><\/span>Voglia di\u00a0<em>clean label<\/em><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>L&#8217;attenzione critica<\/strong>\u00a0dei consumatori nei confronti di queste sostanze \u00e8 sempre maggiore. Lo testimonia il successo della app Yuka, che consente di svelare istantaneamente la presenza di elementi sospetti negli alimenti. E lo conferma la preferenza degli italiani per le\u00a0<em>clean label<\/em>\u00a0rilevata dall&#8217;Osservatorio Immagino.<\/p>\n<p><strong>Un prezioso strumento\u00a0<\/strong>di difesa \u00e8 dunque la guida &#8216;<em>Note sugli additivi alimentari<\/em>&#8216; di <em>European Consumers<\/em>. (1) Un approfondito rapporto realizzato da Pietro Massimiliano Bianco, Marina Mariani e Marco Tiberti (presidente dell&#8217;associazione).<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Additivi_alimentari_linvito_di_European_Consumers\"><\/span>Additivi alimentari, l&#8217;invito di <em>European Consumers<\/em><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Gli autori\u00a0<\/strong>della guida, a esito di approfondita analisi sui singoli additivi alimentari, con riferimenti bibliografici a letteratura scientifica, opinioni di varie autorit\u00e0 deputate alla valutazione scientifica del rischio e restrizioni o divieti stabiliti a livello nazionale e\/o internazionale (in UE e\/o suoi Paesi membri, Svizzera, USA,\u00a0<em>etc<\/em>.) &#8211; invitano i consumAttori a scegliere alimenti naturali o minimamente processati.<\/p>\n<p><strong>Ancora una volta\u00a0<\/strong>si ripropone il tema degli alimenti ultraprocessati, il cui consumo viene sconsigliato poich\u00e9 a esso si associa una\u00a0maggiore esposizione ai rischi di malattie non trasmissibili e\u00a0mortalit\u00e0 prematura,\u00a0pregiudizio al sistema immunitario\u00a0e\u00a0dipendenza da cibo. (2)<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Legislazione_blanda\"><\/span>Legislazione blanda<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>&#8216;<\/strong><em><strong>La legislazione\u00a0appare estremamente permissiva<\/strong> e i limiti EFSA non considerano la sinergia con altre sostanze contenute negli alimenti (ad es. pesticidi, interferenti endocrini). Inoltre manca un adeguato profilo ambientale dei metaboliti che inevitabilmente finiscono nei fiumi e nei corsi d\u2019acqua. Queste sostanze determinano, quando sintetiche, inevitabilmente un peggioramento della salute individuale e della qualit\u00e0 ambientale.<\/em><\/p>\n<p><em><strong>Non viene generalmente applicato il principio di Precauzione<\/strong>, che prevede di adottare i limiti massimi di sicurezza relativi all\u2019assunzione.
