Denver (Colorado, USA) che riunisce pi\u00f9 di 250 imprese, nel mondo, per favorire le sinergie di filiera e promuovere un apposito sistema di certificazione.<\/p>\n<p><strong><em>\u2018Certified Upcycled\u2019<\/em><\/strong>\u00a0\u00e8 il marchio collettivo che figura su diverse centinaia di ingredienti e prodotti ove almeno il 10% delle materie prime derivi da\u00a0<em>upcycling<\/em>. Con un recupero complessivo stimato in quasi un milione di tonnellate di cibo.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"2_Upcycling_economy_perche\"><\/span>2)\u00a0<em>Upcycling economy<\/em>, perch\u00e9<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"color: #008000;\">\u2018<em>Over 30% of all\u00a0food produced globally is lost or goes to waste, and that&#8217;s a big problem for society and the planet. Upcycled food prevents this problem by creating new, high-quality products from surplus food<\/em>\u2019\u00a0(UFA).<\/span><\/p>\n<p><strong>Il recupero virtuoso<\/strong>\u00a0pu\u00f2 dunque restituire valore a derrate &#8211; oggi sprecate &#8211; la cui produzione ha assorbito il 20% delle risorse idriche, il 25% dei terreni coltivati e l\u20198% di gas serra prodotti nelle filiere agroalimentari.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"3_Upcycling_business\"><\/span>3)\u00a0<em>Upcycling business<\/em><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"color: #000080;\"><em>\u201860% of people\u00a0want to buy more upcycled food products, and that&#8217;s because 95% of us want to do our part to reduce food waste<\/em>\u2019\u00a0(Upcycled Food Association).<\/span><\/p>\n<p><strong>Il\u00a0lancio sul mercato<\/strong>\u00a0USA di nuovi\u00a0<em>upcycled food<\/em>, +122% nel quinquennio concluso nel terzo trimestre 2021, ha superato quello dei prodotti con confezioni in plastica da\u00a0riciclo\u00a0e di quelli con indicazioni sulle emissioni di anidride carbonica.<\/p>\n<p><strong>Il valore delle vendite<\/strong>\u00a0\u00e8 attualmente stimato in circa 46,7 miliardi di dollari. I volumi di materiali sottratti agli sprechi alimentari a loro volta registrerebbero un aumento significativo (+6,4%, 2022 su 2021).<\/p>\n<h2><span class=\"ez-toc-section\" id=\"4_Upcycled_foods_i_5_elementi_distintivi_secondo_UFA\"><\/span>4)\u00a0<em>Upcycled foods<\/em>, i 5 elementi distintivi secondo UFA<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><em><strong>Upcycled Food Association<\/strong><\/em>\u00a0ha organizzato nel 2020 un gruppo di esperti &#8211; da Harvard Law School, Drexel University, Natural Resources Defence Council, WWF e <a href=\"https:\/\/refed.org\">ReFED<\/a> &#8211; per mettere a punto una definizione di \u2018<em>upcycled foods<\/em>\u2019. \u00c8 stato cos\u00ec possibile convergere sui 5 elementi distintivi degli alimenti ottenuti da\u00a0<em>upcycling<\/em>.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"41_Ingredienti_altrimenti_destinati_a_impieghi_secondari\"><\/span>4.1) Ingredienti altrimenti destinati a impieghi secondari<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Gli ingredienti\u00a0<\/strong>utilizzati in<em>\u00a0upcycled foods\u00a0<\/em>vengono sottratti ai vari impieghi secondari descritti nella <a href=\"https:\/\/www.egalite.org\/economiacircolare\/\">scala di Lansink<\/a>, paradigma dell\u2019economia circolare.<\/p>\n<p><strong>Produrre cibo\u00a0<\/strong>anzich\u00e9 destinare gli scarti a riciclo in mangimi o fertilizzanti (compost), valorizzazione energetica (i.e. digestori anaerobici), destinazione a rifiuto.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"42_Valore_aggiunto\"><\/span>4.2) Valore aggiunto<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>I processi<\/strong> di\u00a0<em>upcycling<\/em>\u00a0recuperano e convertono il valore che altrimenti verrebbe perso in impieghi secondari dei materiali (v. sopra), per creare un sistema alimentare sostenibile e resiliente.<\/p>\n<p><strong>Il valore aggiunto<\/strong>\u00a0dovrebbe altres\u00ec venire redistribuito nella filiera, aggiungiamo noi. Affinch\u00e9 tutti,\u00a0<em>from farm to fork<\/em>, possano beneficiarne anche dal punto di vista economico.\u00a0<em>Win-win<\/em>.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"43_Consumo_umano_e_pet_food\"><\/span>4.3) Consumo umano (e\u00a0<em>pet food<\/em>)<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><em><strong>Upcycling<\/strong><\/em>\u00a0consiste nell&#8217;elevare il cibo al suo destino pi\u00f9 nobile, nutrire gli esseri umani. Ovvero offrire beni di analogo valore (es. integratori alimentari, farmaci, cosmetici).<\/p>\n<p><strong>Il marchio<\/strong>\u00a0\u2018<em>Upcycled Certified<\/em>\u2019 viene peraltro concesso anche al\u00a0<em>pet food<\/em>, per ragioni di\u00a0<em>business<\/em>\u00a0che ad avviso di chi scrive mal conciliano con il criterio a base dell\u2019<em>upcycling<\/em> (v. par. 4.1).<\/p>\n<h2><span class=\"ez-toc-section\" id=\"44_Filiera_di_approvvigionamento_verificabile\"><\/span>4.4) Filiera di approvvigionamento verificabile<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>La\u00a0<em>supply-chain<\/em>\u00a0<\/strong>deve venire verificata, secondo gli esperti di UFA, affinch\u00e9 gli alimenti riciclati davvero contribuiscano a ridurre gli sprechi.<\/p>\n<p><strong>La logica<\/strong>\u00a0\u00e8 utilizzare tutti i nutrienti coltivati nelle aziende agricole e aiutare gli\u00a0agricoltori\u00a0a ricavare maggior valore dalle loro attivit\u00e0.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"45_Trasparenza_in_etichetta\"><\/span>4.5) Trasparenza in etichetta<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Gli alimenti<\/strong>\u00a0\u2018<em>Upcycled certified<\/em>\u2019, soggetti perci\u00f2 al sistema di certificazione di UFA, devono poi fornire notizie trasparenti in etichetta.<\/p>\n<p><strong>I consumatori\u00a0<\/strong>devono essere in grado di comprendere quali ingredienti derivino da\u00a0<em>upcycling<\/em>, per venire stimolati a contribuire alla lotta contro gli sprechi alimentari.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"5_Innovazione_empowerment\"><\/span>5)\u00a0Innovazione,\u00a0<em>empowerment<\/em><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><em><strong>Agricycle Global<\/strong><\/em>\u00a0ha iniziato a lavorare con 35 mila piccoli agricoltori, nelle comunit\u00e0 rurali di varie aree del pianeta, per offrire\u00a0<em>low-barrier technologies<\/em>\u00a0utili a trasformare gli scarti in ingredienti alimentari.<\/p>\n<p><a href=\"https:\/\/jalifruit.co\"><strong>Jali Fruit Co.<\/strong><\/a> lavora all\u2019<em>empowerment\u00a0<\/em>di donne, giovani e piccoli agricoltori in 40 cooperative nell&#8217;Africa subsahariana e nei Caraibi. Innovazione accessibile per ridurre\u00a0<em>food waste<\/em>\u00a0e\u00a0<em>food loss<\/em>\u00a0nella coltivazione, raccolta e trasformazione della frutta.<\/p>\n<p><strong>La\u00a0Rete<\/strong> produttori\u00a0agricoli della Sabina, in Italia centrale, aspira a produrre\u00a0<em>snack<\/em>\u00a0e semilavorati da frutta scartata con gli essiccatori solari sviluppati dal Crea (Centro di ingegneria e trasformazioni agroalimentari). (4)<\/p>\n<h2><span class=\"ez-toc-section\" id=\"6_Fermentazione\"><\/span>6) Fermentazione<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Ferment&#8217;Up<\/strong>. <a href=\"https:\/\/greenspot-tech.com\/en\/technology-fermentation-platform\/\">Green Spot Technologies<\/a>, fondata a Ramonville-Saint-Agne (Occitania, Francia) con contributi UE, utilizza un processo di fermentazione eco-progettato per produrre farine ad alta densit\u00e0 di nutrienti a partire da polpe di pomodoro, bucce di mela, trebbie delle birrerie, <em>etc<\/em>.<\/p>\n<p><a href=\"https:\/\/www.regrained.com\"><strong>Regrained<\/strong><\/a>\u00a0a Berkeley (California, USA) ricava a sua volta una farina innovativa ad alto tenore di proteine e fibre prebiotiche, SuperGrain+\u00ae, dalla fermentazione dei cereali usati per estrarre il\u00a0malto nelle birrerie.
