(1)<\/p>\n<p><span style=\"color: #000080;\">&#8216;<em>In precedenza avevamo sconsigliato ai consumatori di conservare le patate crude nel frigorifero di casa, poich\u00e9 si pensava che ci\u00f2 potesse portare alla formazione di zuccheri aggiuntivi (noti come dolcificanti a freddo) che possono poi convertirsi in acrilammide quando le patate vengono fritte, arrostite o al forno<\/em>&#8216; (Food Standard Agency, FSA). (2)<\/span><\/p>\n<h2><span class=\"ez-toc-section\" id=\"Patate_in_frigorifero_senza_rischi\"><\/span>Patate in frigorifero senza rischi<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>La precedente raccomandazione<\/strong> FSA \u00e8 stata rivista dopo che\u00a0il suo Comitato sulla tossicit\u00e0 delle sostanze chimiche negli alimenti, nei prodotti di consumo e nell&#8217;ambiente (<em>Committee on the Toxicity of Chemicals in Food<\/em>, COT) ha valutato\u00a0uno studio ove si dimostra che la conservazione domestica delle patate in frigorifero, a raffronto con\u00a0la conservazione in un luogo fresco e buio,\u00a0non aumenta sostanzialmente il potenziale di formazione di acrilammide.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Patate_altri_accorgimenti_per_ridurre_gli_sprechi_alimentari\"><\/span>Patate, altri accorgimenti per ridurre gli sprechi alimentari<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Oltre alla conservazione<\/strong> in frigorifero (a non oltre +4 \u00b0C), che aumenta la <em>shelf-life <\/em>delle patate, si raccomandano altri accorgimenti per ridurre i loro sprechi alimentari:<\/p>\n<p>&#8211; acquistare i tuberi sfusi, anzich\u00e9 in sacchetti, per gestire meglio le scorte (e ridurre i rifiuti di imballaggio),<\/p>\n<p>&#8211; consumare anche le patate con i germogli appena emersi, rimuovendoli accuratamente,<\/p>\n<p>&#8211; congelare le patate, dopo averle sbollentate o cotte (non anche crude). Chiuse in un contenitore ermetico, le patate si conservano nel congelatore per un massimo di tre mesi.
