(2) Tali proteine hanno infatti un elevato valore biologico, grazie a una dotazione completa di\u00a0amminoacidi essenziali, con livelli di biodisponibilit\u00e0 e digeribilit\u00e0 prossimi a quelli di latte e uova, addirittura superiori a quelli delle carni.<\/p>\n<p><strong>Ricerca e innovazione<\/strong>\u00a0si vanno perci\u00f2 orientando verso lo straordinario regno dei funghi commestibili, le cui ife vengono sottoposte a fermentazione anche per migliorare le propriet\u00e0 nutrizionali di cereali, legumi, microalghe. Questo processo, in via di esplorazione in UE nei progetti di ricerca #Cropdiva e #Giantleaps (3) &#8211; in\u00a0Horizon\u00a0Europe &#8211; ha gi\u00e0 consentito a MycoTechnology Inc. (USA) di ottenere proteine di riso e pisello \u2018allergens free\u2019, fermentate con le ife dei funghi Shiitake. (4)<\/p>\n<h2><span class=\"ez-toc-section\" id=\"2_Alt_fish_3D_Salmon\"><\/span>2) Alt fish, 3D Salmon<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><a href=\"https:\/\/revo-foods.com\/\"><strong>Revo food<\/strong><\/a>\u00a0 \u00e8 un\u2019impresa basata a Vienna che offre una variet\u00e0 di \u2018plant-based foods\u2019, con una vocazione particolare verso gli alimenti vegani sostitutivi del pesce (Alt Tuna, Alt Salmon, anche in crema). Le sue ricette tradizionali comprendono acqua, soia, proteine di pisello, oli di colza e di lino, aromi non naturali (i.e. di sintesi) e di fumo, additivi vari, fibre di agrumi, sale marino, amido modificato, ingredienti funzionali (es. concentrato di barbabietola).<\/p>\n<p><strong>\u2018The Fillet\u2019<\/strong>\u00a0viene presentato come un\u2019alternativa\u00a0vegan\u00a0al trancio di salmone fresco, stampata in 3D per meglio integrare i grassi in una matrice proteica e fibrosa.<\/p>\n<p><strong>L\u2019innovazione<\/strong> in questo caso \u00e8 rappresentata dall\u2019impiego di micoproteine, le quali di per s\u00e9 hanno una consistenza simile a quella delle carni. A cui si aggiungono, in esposizione presumibilmente diversa dall\u2019ordine decrescente stabilito nel Food Information Regulation (EU) No\u00a01169\/11:<\/p>\n<ul>\n<li>estruso di proteine di soia (acqua, concentrato di proteine di soia),<\/li>\n<li>acqua,<\/li>\n<li>olio di girasole,<\/li>\n<li>additivi gelificanti (carragenina, metilcellulosa),<\/li>\n<li>aromi,<\/li>\n<li>sale,<\/li>\n<li>olio di da microalghe Schizochytrium sp. ricco in DHA ed EPA, poc\u2019anzi autorizzato come novel food, (5)<\/li>\n<li>vitamine (B3, B6, B9, B12, E),<\/li>\n<li>additivo colorante (ossido di ferro),<\/li>\n<li>licopene,<\/li>\n<li>proteine di colza,<\/li>\n<li>additivo addensante (konjac).<\/li>\n<\/ul>\n<h2><span class=\"ez-toc-section\" id=\"3_%E2%80%98The_Fillet_Claims_profili_nutrizionali\"><\/span>3) \u2018The Fillet\u2019. Claims, profili nutrizionali<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Il \u2018filetto\u2019\u00a0<\/strong>di Alt Salmon viene pubblicizzato come \u2018a base di funghi\u2019, \u2018100% vegano\u2019, \u2018innovazione made in Austria\u2019, con \u2018tutti i 9 aminoacidi essenziali\u2019 e \u2018senza zucchero, glutine e colesterolo\u2019. (6)<\/p>\n<p><strong>Nutrition claims<\/strong>:<\/p>\n<ul>\n<li>\u2018high in proteins\u2019,<\/li>\n<li>alto contenuto di Omega-3,<\/li>\n<li>(fonte di) vitamine A, B2, B3, B6, B12, D2.<\/li>\n<\/ul>\n<p><strong>Profili nutrizionali<\/strong>\u00a0(per 100 g di prodotto):<\/p>\n<ul>\n<li>energia, 173 kcal<\/li>\n<li>grassi, 13,5 g<\/li>\n<li>di cui saturi, 1,7 g<\/li>\n<li>carboidrati, 0,9 g<\/li>\n<li>di cui zuccheri, 0,1 g<\/li>\n<li>fibre, 4,9 g<\/li>\n<li>proteine, 9,5 g<\/li>\n<li>sale, 0,83 g.<\/li>\n<\/ul>\n<h2><span class=\"ez-toc-section\" id=\"4_Distribuzione_prezzi\"><\/span>4) Distribuzione, prezzi<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Il nuovo prodotto<\/strong>\u00a0ha gi\u00e0 raggiunto gli scaffali di un gruppo ristretto di supermercati selezionati del gruppo BILLA che ha circa 1.600 punti vendita (di cui 1.000 in Austria, oltrech\u00e9 in Repubblica Ceca, Slovacchia, Romania, Bulgaria, Croazia, Russia e Ucraina), a sua volta parte del colosso tedesco REWE, con oltre 3.700 negozi. Ed \u00e8 in teoria disponibile &#8211; bench\u00e9 di fatto esaurito &#8211; sul sito e-commerce di Revo Food, al prezzo di \u20ac 6,99 nella confezione da 130 g (\u20ac 53,77\/kg).<\/p>\n<h2><span class=\"ez-toc-section\" id=\"5_Conclusioni_provvisorie\"><\/span>5) Conclusioni provvisorie<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>La vera innovazione <\/strong>&#8211; alla base di \u2018The Fillet\u2019 &#8211; \u00e8 costituita dalle micoproteine sviluppate da Mycorena, una startup di G\u00f6teborg (Svezia). Il suo \u2018ingrediente magico\u2019, <a href=\"https:\/\/mycorena.com\/promyc\">Promyc\u00ae<\/a>, risulta essere ricco in proteine (45-60%) complete di tutti gli aminoacidi essenziali, fibre (6-15%), nonch\u00e9 alcune vitamine (B,D) e oligoelementi (zinco). Mycorena realizza altres\u00ec un\u2019emulsione di \u2018grasso poco grasso\u2019, Mycolein\u2122, a sua volta derivato dai funghi.<\/p>\n<p><strong>Il potenziale <\/strong>di questo tipo di ingredienti \u00e8 straordinario, poich\u00e9 ai pregevoli profili nutrizionali si aggiunge una grande versatilit\u00e0 applicativa, grazie alle propriet\u00e0 tecnologiche (che consentono di attribuire struttura e consistenza ai cibi ovvero emulsionare le matrici, a seconda dei casi) e ai profili organolettici (sapori e aromi tendenzialmente neutro). Rimane da chiarire l\u2019applicazione del Novel Food Regulation (EU) No\u00a02015\/2283.
