Si caratterizzano per il profilo nutrizionale equilibrato &#8211; ricco di proteine e fibre alimentari, con una dotazione completa degli aminoacidi essenziali, nonch\u00e9 povero in grassi &#8211; e una consistenza simile a quella delle carni. Il sapore, di per s\u00e9 neutro, viene arricchito di volta in volta nelle varie ricette. (2)<\/p>\n<p><strong>Il successo\u00a0di\u00a0Quorn\u00ae<\/strong> ha stimolato Marlow Foods ad ampliare la produzione e offrire il prodotto anche quale ingrediente per la produzione alimentare, nel 2023, attraverso la sua Marlow Ingredients.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"2_Novel_Foods_Regulation\"><\/span>2) Novel Foods Regulation<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Quorn\u00ae<\/strong>\u00a0\u00e8 stato sempre qualificato come un alimento tradizionale poich\u00e9 ha maturato una storia di consumo significativo nel territorio europeo prima del 15 maggio 1997, data di entrata in vigore del primo Novel Foods Regulation (EC) No 257\/1997, poi abrogato dal successivo Reg. (EU) No 2015\/2283. (3)<\/p>\n<p><strong>Lo\u00a0status\u00a0di altri prodotti<\/strong> e ingredienti alimentari con micoproteine da\u00a0<em>Fusarium venenatum<\/em>\u00a0\u00e8 invece rimasto incerto fino al 6 agosto 2024, quando la Commissione europea ha risposto alla consultazione attivata da un operatore interessato, secondo la procedura stabilita dal Novel Foods Regulation (EU) No 2015\/2283.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"3_Procedura_di_consultazione\"><\/span>3) Procedura di consultazione<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>La procedura\u00a0di consultazione<\/strong> ha avuto per oggetto le micoproteine derivate dal microrganismo\u00a0<em>Fusarium venenatum<\/em>\u00a0A 3\/5 (ceppi IMI 145425, NRRL 26139).<\/p>\n<p><strong>Il prodotto<\/strong>\u00a0viene descritto come una preparazione ricca di proteine (micoproteine) derivate dallo stesso ceppo utilizzato nel Quorn\u00ae, realizzata con lo stesso processo di produzione (fermentazione aerobica di un substrato glucidico).<\/p>\n<p><strong>Le categorie di alimenti<\/strong>\u00a0proposte per l\u2019utilizzo di tale preparazione come ingrediente sono a loro volta le stesse utilizzate per il Quorn\u00ae.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"4_Risultato_della_valutazione\"><\/span>4) Risultato della valutazione<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Le autorit\u00e0 competenti<\/strong>\u00a0della Commissione Europea e del Belgio, ove la consultazione \u00e8 stata avviata &#8211; presso il\u00a0Federal Public Service (FPS) on Health,\u00a0Food Chain Safety and Environment\u00a0&#8211; hanno valutato le micoproteine in esame come un alimento \u2018not novel\u2019. Il ceppo di\u00a0<em>Fusarium venenatum\u00a0<\/em>\u00e8 invero lo stesso impiegato per produrre il Quorn\u00ae, e cos\u00ec gli utilizzi previsti.<\/p>\n<p><strong>Il richiedente<\/strong>\u00a0ha presentato le informazioni e analisi necessarie alla valutazione del rischio, le quali comprendono la composizione dell\u2019alimento, il livello di RNA, l\u2019assenza di metalli pesanti e micotossine, eventuali residui di pesticidi e allergeni. Su tali basi sono state stabilite apposite specifiche, per garantire l\u2019immissione in commercio di prodotti conformi ai requisiti di sicurezza alimentare.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"5_Limiti\"><\/span>5) Limiti<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>\u00c8 bene ricordare<\/strong>\u00a0che il processo di consultazione copre soltanto le micoproteine ottenute dal ceppo specificato nella procedura di consultazione, realizzate con lo stesso processo produttivo e utilizzate alle medesime condizioni d\u2019uso.<\/p>\n<p><strong>L\u2019utilizzo\u00a0di\u00a0<\/strong><em><strong>Fusarium venenatum<\/strong>\u00a0<\/em>tal quale &#8211; ovvero la presenza di condizioni diverse da quelle definite, tra cui un ceppo, un processo produttivo e\/o usi differenti &#8211; richiede perci\u00f2 l\u2019attivazione di una nuova procedura di consultazione da parte dell\u2019operatore interessato.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"6_Conclusioni_provvisorie\"><\/span>6) Conclusioni provvisorie<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Qualsiasi operatore<\/strong>\u00a0interessato pu\u00f2 produrre e commercializzare in UE alimenti e ingredienti alimentari a base di micoproteine da\u00a0<em>Fusarium venenatum<\/em>, senza dover presentare alcuna richiesta di autorizzazione come novel food, a condizione di non utilizzare ceppi differenti n\u00e9 processi produttivi n\u00e9 condizioni d\u2019uso significativamente diversi da quelli definiti a esito della consultazione in esame.<\/p>\n<p><em>Dario Dongo e Andrea Adelmo Della Penna<\/em><\/p>\n<h3><span class=\"ez-toc-section\" id=\"Note\"><\/span>Note<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>(1) Mycoprotein derived from the microorganism\u00a0Fusarium venenatum\u00a0A 3\/5. 6.8.24\u00a0<a href=\"https:\/\/tinyurl.com\/9uwxpsft\">https:\/\/tinyurl.com\/9uwxpsft<\/a><\/p>\n<p>(2) Dario Dongo, Andrea Adelmo Della Penna.
